Global population growth in addition with increasing meat consumption is leading to an intensification of livestock production. This is associated with an increased use of antibiotics in livestock breeding. The improper use as a pharmaceutical or illegal use as growth promoters can lead to antibiotic residues in food of animal origin and may pose a health risk to consumers. Moreover, the inappropriate use of antibiotics promotes a spread of multi-resistant bacteria and jeopardizes public health.
For these reasons, most countries have established Maximum Residue Limits (MRLs) and monitoring programs for antibiotic residues in food. Non-compliance with these legislations can lead to severe penalties. For biotechnological industries, antibiotic residues bear a technological and economic risk, as they can inhibit production processes involving microorganisms, for instance cheese or yoghurt.
