Die Ursache ist meist das Protein Parvalbumin, ein sehr potentes Allergen, das in vielen Fischarten vorkommt. Mittels real-time PCR l\u00e4sst sich die DNA der Knochenfische in Lebensmitteln nachweisen. So kann Fisch als Allergen zuverl\u00e4ssig detektiert werden.
