Die Milchallergie (auch Milcheiwei\u00dfallergie) ist hingegen eine \u201eechte\u201c Lebensmittelallergie und wird durch allergene Bestandteile im Milcheiwei\u00df ausgel\u00f6st.<\/p>\n\n\n\n<p>Kuhmilch enth\u00e4lt insgesamt 3,2 % Protein,&nbsp; das zu ca. 10 % aus \u00df-Lactoglobulin (Leitprotein der Molke) und zu ca. 80 % aus Caseinen&nbsp; besteht.<\/p>\n\n\n<div class=\"acf-block block-tabs block-\"><div class=\"block-tabs__menu\"><button onclick=\"openTab(event, 'tab--1',  'block-')\" class=\"block-tabs__title active \">Casein<\/button><button onclick=\"openTab(event, 'tab--2',  'block-')\" class=\"block-tabs__title  \">\u00df-Lactoglobulin<\/button><\/div><div class=\"block-tabs__area\"><div class=\"block-tabs__content active tab--1\"><p>Das Milchprotein Casein ist eines der Hauptallergene in Milch. Es spielt bei der K\u00e4seherstellung eine wichtige Rolle und ist vor allem in K\u00e4se, Quark, Joghurt, Sahne und Butter enthalten. Aber auch Backwaren, Schokolade, Wein, Fleisch- und Wurstwaren enthalten Casein. Da das Protein Casein nicht spezifisch f\u00fcr Kuhmilch ist, kommt es auch in Schafsmilch, Ziegenmilch, B\u00fcffelmilch und anderen Milchsorten vor.<\/p>\n<\/div><div class=\"block-tabs__content  tab--2\"><p>Das Protein \u00df-Lactoglobulin ist ein Leitprotein der Molke. Neben Frischmilch ist es in hydrolisierten Milchprodukten wie Babynahrung enthalten. Die Allergie gegen \u00df-Lactoglobulin tritt zumeist bei Kindern auf, w\u00e4hrend Erwachsene h\u00e4ufiger allergisch auf Casein reagieren. Da das Protein nicht hitzestabil ist, werden gekochte Milchprodukte von Allergikern oft gut vertragen. Auch Produkte aus Schafs- oder Ziegenmilch sind vertr\u00e4glich.<\/p>\n<\/div><\/div><\/div>\n\n\n<p>Milch ist als Allergen in vielen L\u00e4ndern kennzeichnungspflichtig. Nach der EU Richtlinie 2003\/89\/EG vom 10.11.2003 m\u00fcssen Milch und Milchbestandteile auf den Lebensmitteletiketten angegeben werden. Um ein f\u00fcr Milchallergiker sicheres Produkt zu gew\u00e4hrleisten, ist es wichtig, Lebensmittel und Oberfl\u00e4chen w\u00e4hrend des Produktionsprozesses auf Milcheiwei\u00df zu testen.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Nachweistests f\u00fcr Milch in verschiedenen Lebensmitteln<\/h2>\n\n\n\n<p>Milch ist in Lebensmitteln unterschiedlich prozessiert, wobei sich sowohl die Gehalte an Proteinen als auch die Proteinstruktur unterscheiden. Milchhaltige Lebensmittel k\u00f6nnen unterschiedliche Milchproteine enthalten. Bei der Untersuchung von durch Milch oder Milcherzeugnisse verursachten Kontaminationen kann deshalb die Auswahl des passenden Tests (RIDASCREEN\u00aeFAST Casein (Art. Nr.
