Der ungewollte Verzehr kann bei Allergikern ernsthafte allergische Symptome ausl\u00f6sen, die von einem Hautausschlag bis hin zu einem lebensgef\u00e4hrlichen anaphylaktischen Schock f\u00fchren k\u00f6nnen. Zurzeit ist die einzige effektive Behandlung von allergischen Patienten die strikte Vermeidung von sesamhaltigen Lebensmitteln. Bisher konnten sieben verschiedene Proteine als Allergene in Sesam identifiziert werden (Ses i 1-7).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sesam kann in vielen Lebensmitteln enthalten sein, z.B. in Backwaren, Backmischungen, Keksen, Schokolade oder Desserts. In der Produktion von Lebensmitteln werden in Fabriken h\u00e4ufig die gleichen Produktionslinien f\u00fcr unterschiedliche Produkte verwendet. Dabei kann es zu ungewollten Kreuzkontaminationen zwischen sesamhaltigen und sesamfreien Lebensmitteln kommen.
