So wird mitunter hochwertiges Fleisch durch g\u00fcnstigeres Fleisch ersetzt. Gro\u00dfe Aufmerksamkeit hat zum Beispiel der Pferdefleischskandal in Deutschland erfahren, wo in Rindfleisch-Lasagne Pferdefleisch nachgewiesen wurde. In Gro\u00dfbritannien wurde ebenfalls Pferde-DNA in Rindfleisch-Burgern gefunden. Die Beimischung von falschen Zutaten in Lebensmittelprodukte, entweder durch skrupellose H\u00e4ndler oder eine nachl\u00e4ssige Verarbeitung, muss von den Lebensmittelbeh\u00f6rden weltweit kontinuierlich \u00fcberwacht werden. W\u00e4hrend der Verarbeitung von Fleischprodukten im Schlachthaus ist m\u00f6glicherweise nicht immer zu 100 % klar, von welchem Tier die jeweiligen Fleischprodukte stammen. Dies gilt f\u00fcr Hackfleisch und weiterverarbeitete Fleischerzeugnisse genauso wie f\u00fcr fleischhaltige Futterprodukte. Hierdurch entsteht ein Risiko einer gewissen Verf\u00e4lschung der Produkte.&nbsp; Solche Produktverf\u00e4lschungen k\u00f6nnen mittels real-time PCR hochspezifisch detektiert und auch relativ quantifiziert werden (in Prozentangabe der jeweiligen Tierartenspezies zur Gesamtmenge des Fleischs).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Tierartennachweis wegen religi\u00f6ser Forderungen (halal und koscher)<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Vor allem f\u00fcr muslimische und j\u00fcdische Verbraucher ist es wichtig zu wissen, ob Nahrungsmittel, die ihnen zum Verzehr erlaubt sind und in Einklang mit dem muslimischen beziehungsweise j\u00fcdischen Glauben zubereitet wurden (\u201chalal\u201d bzw. \u201ckoschere\u201d Nahrungsmittel), auch nur geringste Verunreinigungen enthalten. Um diesen Menschen, die etwa 23 Prozent der Weltbev\u00f6lkerung ausmachen, gerecht zu werden, gibt es PCR-Tests, die spezifisch nachweisen k\u00f6nnen, ob es sich bei dem Fleisch z.B. um Rind, Gefl\u00fcgel, Schwein oder Lamm handelt. Dies bedeutet insbesondere f\u00fcr den Nachweis von Schweinefleisch, dass rein qualitative und besonders sensitive Tests erfordert sind.
