Die \u201eaerobe mesophile Gesamtkeimzahl\u201c gibt an, wie viele Mikroorganismenkolonien sich auf einem Gesamtkeimzahl-N\u00e4hrboden (oder \u201ePlate Count\u201c = PC) im Verlaufe einer bestimmten Inkubationszeit bei einer mesophilen Bebr\u00fctungstemperatur (ca. 30 \u2013 37 \u00b0C) bilden. Die Gesamtkeimzahl gilt als Indikator f\u00fcr den mikrobiologischen Status einer Produktionscharge oder beschreibt den momentanen Hygienestatus des Produktionsumfeldes.<\/p>\n<\/div><div class=\"block-tabs__content  tab--2\"><p>Coliforme Bakterien gelten als Indikator f\u00fcr f\u00e4kale Kontaminationen und werden h\u00e4ufig f\u00fcr das Monitoring der Wasserqualit\u00e4t genutzt. Werden im Produktionsumfeld oder in Lebensmitteln coliforme Bakterien nachgewiesen, weist das darauf hin, dass die Hygienebedingungen im Produktionsprozess verbessert werden m\u00fcssen. Der Begriff coliforme Bakterien bezeichnet keine spezifische taxonomische Gruppe, sondern fasst einige Vertreter der Familie der Enterobakterien zusammen. Ihr gemeinsames biochemisches Merkmal ist die positive Laktose-Reaktion sowie die negative Oxidase-Reaktion. Coliforme Bakterien k\u00f6nnen mit Hilfe von N\u00e4hrmedien, die chromogene Substrate f\u00fcr das Enzym \u03b2-Galactosidaseenthalten, leicht identifiziert werden.<\/p>\n<\/div><div class=\"block-tabs__content  tab--3\"><p>Enterobakterien sind gramnegative, st\u00e4bchenf\u00f6rmige Bakterien, die bis zu 5 \u00b5m L\u00e4nge erreichen k\u00f6nnen. Sie sind fakultativ anaerob und meist beweglich, es existieren aber auch unbewegliche Gattungen. Enterobakterien sind oxidase-negativ und k\u00f6nnen anhand dieses Merkmals einfach von \u00e4hnlichen Bakterien unterschieden werden. Viele Enterobakterien sind Teil der gesunden Darmflora des Menschen und von Tieren. Auch in der Umwelt kommen sie weit verbreitet vor (z.B.: Boden, Wasser). Einige Gattungen sind auch als Krankheitserreger bekannt und k\u00f6nnen leichte bis schwere Darmerkrankungen ausl\u00f6sen, wobei meist Menschen mit schwachem Immunsystem besonders betroffen sind. Einige Vertreter der Enterobakterien sind <em>Cedecea, Citrobacter, Enterobacter, Escherichia, Hafnia, Klebsiella, Kluyvera, Morganella, Proteus, Rahnella, Salmonella, Serratia, Shigella<\/em> und <em>Yersinia<\/em>.<\/p>\n<\/div><div class=\"block-tabs__content  tab--4\"><p>Enterokokken sind Gram-positive Organismen, die wie die Gram-negativen Enterobacteriaceae zu den Darmbakterien geh\u00f6ren. Sie k\u00f6nnen als Kontamination in verschiedenen fermentierten Lebensmittelprodukten vorkommen. Die Anwesenheit von Enterokokken im Lebensmittel wurde f\u00fcr lange Zeit als Hauptindikator f\u00fcr unzureichende Hygienebedingungen im Produktionsprozess angesehen. Andererseits werden gerade Enterokokken als Starterkulturen f\u00fcr spezifische Fermentationsprozesse genutzt. Es ist bekannt, dass Enterokokken eine wichtige Rolle f\u00fcr die Entwicklung der sensorischen Eigenschaften fermentierter Lebensmittelprodukte spielen. Im Trinkwasser gilt die Anwesenheit von Enterokokken als Indikator f\u00fcr f\u00e4kale Verunreinigungen. Enterokokken k\u00f6nnen nur \u00fcber humane oder tierische F\u00e4kalien ins Gew\u00e4sser gelangen.<\/p>\n<\/div><div class=\"block-tabs__content  tab--5\"><p>Hefen und Schimmelpilze k\u00f6nnen Lebensmittel kontaminieren und f\u00fcr einen raschen Verderb der befallenen Produkte sorgen. Insbesondere Schimmelpilze k\u00f6nnen, aufgrund ihrer F\u00e4higkeit Toxine und allergene Stoffe zu bilden, hochgradig gesundheitssch\u00e4dlich sein. Durch ihre rasche Verbreitung \u00fcber St\u00e4ube und Aerosole gelangen sie immer wieder auf relevante Fl\u00e4chen im Produktionsumfeld und sollten daher im Hygienemonitoring mit \u00fcberwacht werden.<\/p>\n<p>Hefen sind fakultativ anaerobe, einzellige Sprosspilze (Ascosporidae), die Zucker in ihrem Substrat zu Kohlenstoffdioxid und Wasser oxidieren. Unter Sauerstoffabschluss wird Zucker zu Alkohol und Kohlenstoffdioxid abgebaut. Aus dieser F\u00e4higkeit resultiert ihre industrielle Bedeutung f\u00fcr die Bier-, Wein-und auch Backwarenherstellung, wobei die Art Saccharomyces cerevisiae die \u00f6konomisch bedeutsamste Form darstellt.<\/p>\n<p>Mit dem Begriff \u201eSchimmel\u201c bezeichnet man vor allem die oberfl\u00e4chlich sichtbaren Ausw\u00fcchse der Schimmelpilze (Konidien- oder Sporangientr\u00e4ger). Im N\u00e4hrboden bilden Schimmelpilze ein Mycel aus, welches mit blo\u00dfem Auge meist nicht sichtbar ist. Man kann zwischen sch\u00e4dlichen Schimmelpilzen und n\u00fctzlichen Formen (z. B.
