In einer entsprechenden Konzentration k\u00f6nnen solche R\u00fcckst\u00e4nde f\u00fcr den Menschen gef\u00e4hrlich sein. Zum Schutz des Verbrauchers wurden deshalb in vielen L\u00e4ndern R\u00fcckstandsh\u00f6chstmengen (MRLs) festgelegt, deren Einhaltung in \u00dcberwachungsprogrammen kontrolliert wird. Antibiotika sind in der Lage, Mikroorganismen abzut\u00f6ten oder ihr Wachstum zu hemmen. In der Human- und Veterin\u00e4rmedizin werden Antibiotika daher als Medikamente zur Behandlung bakterieller Erkrankungen eingesetzt.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Hormone und Anabolika<\/h4>\n\n\n\n<p>R\u00fcckst\u00e4nde von Hormonen und anabolen Steroiden in Lebensmitteln wie Fleisch oder Milch stellen ein potenzielles Gesundheitsrisiko f\u00fcr Verbraucher dar. Hormone sind k\u00f6rpereigene biochemische Botenstoffe, die durch die Blutbahn zu ihren Zielorganen transportiert werden. Neben nat\u00fcrlichen Sexualhormonen k\u00f6nnen auch synthetische Steroide und Beta-Agonisten in der Viehzucht eingesetzt werden, um die Gewichtszunahme und das Fleisch\/Fett-Verh\u00e4ltnis zu verbessern.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Sonstige Tierarzneimittel<\/h4>\n\n\n\n<p>Neben Antibiotika und Anabolika k\u00f6nnen in der Veterin\u00e4rmedizin weitere Arzneimittel zum Einsatz kommen, die ebenso zu R\u00fcckst\u00e4nden in Lebensmitteln f\u00fchren k\u00f6nnen. Zu diesen Medikamenten z\u00e4hlen Fungizide (um Pilze abzut\u00f6ten oder ihr Wachstum zu hemmen), Wurmmittel (zur Behandlung von Infektionen mit parasit\u00e4ren W\u00fcrmern), Kortikosteroide (ein synthetisches Steroid-Hormon, das verschiedene K\u00f6rperfunktionen unterst\u00fctzt), Beruhigungsmittel (zur Pr\u00e4vention des Stress-Syndroms und von Erkrankungen w\u00e4hrend des Transports bei Schweinen) und Kokzidiostatika (zur Behandlung oder Pr\u00e4vention der parasit\u00e4ren Erkrankung Kokzidiose).<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Chemische Kontaminanten<\/h4>\n\n\n\n<p>Chemische Kontaminationen von Lebensmitteln sind ein Gesundheitsrisiko. Eine wichtige Quelle chemischer Kontamination ist die Migration aus Verpackungsmaterialien. Ein Beispiel hierf\u00fcr ist Bisphenol A (BPA), eine Substanz, die in der Produktion von Polykarbonat-Kunststoffen genutzt wird. \u00dcber Plastikflaschen oder Plastikverpackungen kann BPA in Lebensmittel wandern.
