Grundlage der Analytik der nat\u00fcrlichen und zugesetzten Vitamine liegt darin zu pr\u00fcfen, ob rechtliche Vorgaben eingehalten werden, ob die deklarierten Vitamingehalte auch tats\u00e4chlich in dem jeweiligen Lebensmittel enthalten und ob Werbehinweise der Hersteller gerechtfertigt sind. Somit ist es notwendig, analytische Methoden zur Hand zu haben, die eine schnelle und zuverl\u00e4ssige Bestimmung der Vitamine in diesen Produkten erlauben.<\/p>\n\n\n\n<p>Am 22. November 2011 ist die Lebensmittelinformationsverordnung (LMIV) im Amtsblatt der EU ver\u00f6ffentlicht worden. Hierin sind einige neue Informationspflichten zu bestimmten Inhaltsstoffen enthalten. Des Weiteren m\u00fcssen die auf dem Label gekennzeichneten Vitamingehalte bis zum Ende des Mindesthaltbarkeitsdatums im Lebensmittel, Futtermittel und pharmazeutischen Erzeugnis auch vorhanden sein. Laut Empfehlungen der Gesellschaft Deutscher Chemiker (GDCh) werden Toleranzen bei den Vitaminen der Gruppe 3 (Vitamin A, D, E, Fols\u00e4ure, Vitamin B12 und Biotin) bis zu 30 % des gekennzeichneten Gehaltes toleriert, bei den Vitaminen der Gruppe 2 (Vitamin B1, B2, B6, Pantothens\u00e4ure, Niacin und Vitamin C) sind es 20 %. Daher ist es notwendig, dass sowohl Hersteller als auch \u00dcberwachungsbeh\u00f6rden die Vitamingehalte kontrollieren.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Hintergrundinformationen zu Vitaminen<strong><\/strong><\/h3>\n\n\n\n<p>Vitamine st\u00e4rken das Immunsystem, erm\u00f6glichen die Verwertung von N\u00e4hrstoffen, haben Enzymfunktion, entgiften den Organismus und verringern das Herzinfarktrisiko. Sie sind unerl\u00e4sslich f\u00fcr unsere Energieproduktion und beeinflussen Stoffwechselreaktionen, ohne sich selbst zu ver\u00e4ndern. Sogar geringe Vitamindosen haben eine beachtliche Wirkung. Unter bestimmten Umst\u00e4nden kann es jedoch zu einem Vitaminmangel, einer Hypovitaminose, kommen.<\/p>\n\n\n\n<p>Vitamine kommen sowohl in pflanzlichen als auch in tierischen Lebensmitteln vor. Man unterscheidet zwei Gruppen: fettl\u00f6sliche und wasserl\u00f6sliche Vitamine. Erstere werden im K\u00f6rper gespeichert, was im g\u00fcnstigsten Fall zu einer Vorratsspeicherung f\u00fchren kann und somit eine st\u00e4ndige Zufuhr \u00fcberfl\u00fcssig macht. Auf der anderen Seite kann dieser \u00dcberschuss zu gesundheitlichen Problemen f\u00fchren. Wasserl\u00f6sliche Vitamine dagegen werden kaum gespeichert, sondern eher ausgeschieden und m\u00fcssen somit st\u00e4ndig erg\u00e4nzt werden. Einzig Vitamin B12 kann in der Leber gespeichert werden.<\/p>\n\n\n\n<p>Es gibt insgesamt 13 Vitamine, wobei vier davon (A, D, E und K) fettl\u00f6slich und die anderen (Vitamine der B-Gruppe sowie Vitamin C) wasserl\u00f6slich sind. Diese heterogene Gruppe von lebensnotwendigen organischen Substanzen ist essentiell, das hei\u00dft, dass der K\u00f6rper selbst Vitamine mit wenigen Ausnahmen nicht bilden kann und somit mit der Nahrung aufnehmen muss. Vitamin D bildet eine Ausnahme, da der K\u00f6rper es bei Sonneneinstrahlung in der Haut selbst bilden kann. Nat\u00fcrlicherweise kommt Biotin in Milch, Milchprodukten, Eiern, Haferflocken, N\u00fcssen vor, um nur einige zu nennen. Es hat gro\u00dfe Bedeutung f\u00fcr den Stoffwechsel bei Mensch und Tier, da es als Coenzym an wichtigen Prozessen wie Glukoneogenese, Biosynthese der Fetts\u00e4uren und Stoffwechsel der Aminos\u00e4uren beteiligt ist. Biotinmangel f\u00fchrt beim S\u00e4uger zu Wachstumshemmungen, Appetitlosigkeit und schlechter Verwertung der Nahrungsstoffe, zum Beispiel durch Ver\u00e4nderung der Darmflora. Im fortgeschrittenen Zustand manifestiert sich die Avitaminose in Haarausfall, Dermatitis und L\u00e4hmungserscheinungen. Der Biotinbedarf liegt bei Erwachsenen zwischen 30 \u2013 60 \u00b5g Biotin pro Tag.<\/p>\n<\/div><div class=\"block-tabs__content  tab-vitaminblock2-3\"><p>Fols\u00e4ure (fr\u00fcher als Vitamin B9 oder B11 bezeichnet) geh\u00f6rt zur Gruppe der wasserl\u00f6slichen Vitamine. Das Vitamin kann vom menschlichen K\u00f6rper nicht selbst hergestellt werden und muss deshalb \u00fcber die Nahrung aufgenommen werden. Fols\u00e4urequellen sind zum Beispiel gr\u00fcnes Blattgem\u00fcse, Hefe, Weizenkeime und Vollkornprodukte. Fols\u00e4ure spielt eine Schl\u00fcsselrolle f\u00fcr alle Wachstums- und Zellteilungsprozesse im K\u00f6rper. Eine angemessene Aufnahme von Fols\u00e4ure w\u00e4hrend der Schwangerschaft ist wichtig, um zum Beispiel Neuralrohrdefekte zu vermeiden. In einigen L\u00e4ndern gibt es Vereinbarungen, in denen Brot, Zerealien, Mehl, Teigwaren, Reis oder andere Kornprodukte mit Fols\u00e4ure in verschiedenen Konzentrationen angereichert werden, um den Vitaminstatus der Bev\u00f6lkerung zu verbessern.<\/p>\n<\/div><div class=\"block-tabs__content  tab-vitaminblock2-4\"><p>Niacin (auch bekannt als Nicotins\u00e4ure oder Vitamin B3) geh\u00f6rt zur Gruppe der wasserl\u00f6slichen Vitamine. Es kann vom menschlichen K\u00f6rper in geringen Konzentrationen selbst hergestellt werden, und zwar aus der Aminos\u00e4ure Tryptophan, es muss aber in gr\u00f6\u00dferen Konzentrationen \u00fcber die Nahrung aufgenommen werden. Niacin kommt vor allem in Lebensmitteln wie Gefl\u00fcgel, Fisch, Pilzen und Milchprodukten vor. Das Vitamin spielt eine wichtige Rolle im Kohlenhydrat-, Fett- und Eiwei\u00df-Stoffwechsel. Ein Niacinmangel kann Hautver\u00e4nderungen und Entz\u00fcndungen der Mund- und Magen-Darm-Schleimh\u00e4ute hervorrufen.<\/p>\n<\/div><div class=\"block-tabs__content  tab-vitaminblock2-5\"><p>Pantothens\u00e4ure (auch bekannt als Vitamin B5) geh\u00f6rt zur Gruppe der wasserl\u00f6slichen Vitamine. Vitamin B5 spielt eine wichtige Rolle im Aufbau von Coenzym A, und ist am Aufbau von Kohlenhydraten und Fetten beteiligt. Ein Mangel an Pantothens\u00e4ure kann zu M\u00fcdigkeit, Immunschw\u00e4che und Depressionen f\u00fchren.<\/p>\n<\/div><div class=\"block-tabs__content  tab-vitaminblock2-6\"><p>L-Ascorbins\u00e4ure (auch unter dem Namen Vitamin C bekannt) wird als Vitamin, aber auch als Antioxidans und Konservierungsmittel in der Lebensmittelindustrie verwendet. Bei einem Mangel an Vitamin C kann sich beim Menschen Skorbut manifestieren. Da Vitamin C teilweise im Lebensmittel in die ebenfalls biologisch aktive L-Dehydroascorbins\u00e4ure umgewandelt wird, sollten beide Stoffe in einem Testsystem erfasst werden.<\/p>\n<p>F\u00fcr den Nachweis von Vitamin C in Lebensmitteln eignet sich der Test VitaFast\u00ae Vitamin C (L-Ascorbins\u00e4ure\/L-Ascorbic Acid) (Art. Nr. P1010). Dieser Test ist ein einfach durchzuf\u00fchrender enzymatischer Test im Mikrotiterplattenformat zur quantitativen Bestimmung von Vitamin C (L-Ascorbins\u00e4ure) in Lebensmitteln, pharmazeutischen Erzeugnissen und anderen Probematerialien. Der Test erlaubt auch die wichtige Bestimmung des Gesamtgehalts an Vitamin C (L-Ascorbins\u00e4ure + L-Dehydroascorbins\u00e4ure). Im Test-Kit sind alle ben\u00f6tigten Reagenzien enthalten, inklusive eines L-Ascorbins\u00e4ure-Standards f\u00fcr die Kalibrierung. Mit dem Test k\u00f6nnen 50 Bestimmungen (plus 4 Standardreihen) durchgef\u00fchrt werden. F\u00fcr die Auswertung ist ein Mikrotiterplatten-Photometer (550 \u2013 570 nm) notwendig. Die Nachweis- und Bestimmungsgrenze des VitaFast\u00ae Vitamin C-Tests liegt bei 7,8 mg\/100g (ml). Die Wiederfindungsrate liegt zwischen 95 \u2013 105 % (bei Dotierung mit frisch angesetzter Ascorbins\u00e4ure). Der Test wurde umfangreich validiert. Im Stoffwechsel ist Inositol ein wichtiger Baustein verschiedener Signal\u00fcbertragungsmolek\u00fcle und Lipide. Da Inositol allerdings kein essentieller Baustein ist, sondern aus Glucose im Stoffwechsel hergestellt werden kann, wird es heute nur noch als Vitamin-\u00e4hnliche Substanz bezeichnet. Inositol ist ein 6-wertiger zyklischer Alkohol und besitzt neun Isomere, welche die gleiche Summenformel C6H12O6 aufweisen. Das h\u00e4ufigste nat\u00fcrliche Isomer ist myo-Inositol. Der Gehalt an Inositol in Lebensmittel ist teilweise durch Gesetze geregelt, wenn Inositol zugesetzt wird. Bei Energydrinks ist eine gesetzlich festgelegte Obergrenze von 200 mg\/L (\u00a7 4 Abs.2 FrSaftErfrischGtrV) vorgegeben.
