Neben Ovalbumin, Ovomucoid und Ovotransferrin kann Lysozym bei entsprechenden Personen zu allergischen Reaktionen f\u00fchren. Nach der Europ\u00e4ischen Allergenkennzeichnungsverordnung muss Ei in Lebensmitteln deklariert werden.<\/p>\n<p><!--more--><\/p>\n<p>Lysozym wird oft als Konservierungsmittel bei der Weinproduktion, wie auch bei der Wurstherstellung verwendet. Es wird auch bei der K\u00e4seproduktion eingesetzt, um die Butters\u00e4ureg\u00e4rung durch das Bakterium Clostridium tyrobutyricum zu verhindern.<\/p>\n<p>Die Nachweisgrenze des RIDASCREEN\u00aeFAST Lysozym-Tests liegt bei 0,02 mg\/kg (ppm) Lysozym und die Bestimmungsgrenze ist 0,05 mg\/kg (ppm) Lysozym.
