Da diese zur Herstellung von Lebensmitteln und Getr\u00e4nken eingesetzt werden sollten, k\u00f6nnen R\u00fcckst\u00e4nde von Chloramphenicol trotz geringer Einsatzkonzentrationen der Enzympr\u00e4parate nicht ausgeschlossen werden. Obwohl davon ausgegangen wird, dass zurzeit keine direkte Gesundheitsgefahr f\u00fcr den Konsumenten besteht, verlangen die Gesetze der Europ\u00e4ischen Union, dass Lebensmittel zu keiner Zeit verbotene Substanzen wie z.B. Chloramphenicol enthalten d\u00fcrfen.
