Aflatoxina
Las aflatoxinas son metabolitos secundarios producidos por las especies de hongo Aspergillus flavus, parasiticus y nomius. Estos hongos son habituales en zonas húmedas tropicales. Las aflatoxinas son extremadamente tóxicas incluso en bajas concentraciones. Además, constituyen una de las sustancias más carcinógenas de aparición natural.
Las aflatoxinas pueden estar presentes en alimentos muy diversos. Los tipos de aflatoxina más importantes son los siguientes:
Se trata del tipo de aflatoxina más prevalente y tóxico. Aparece en casi todos los casos, junto con las aflatoxinas B2, G1 y G2. Suele estar presente en productos como maíz, cacahuetes, nueces del Brasil, semilla de algodón y pistachos. Aunque también en otros alimentos como arroz, mijo, almendras, anacardos, chiles, café, especias, semillas oleaginosas o fruta seca.
Este tipo de aflatoxina se produce como metabolito de la aflatoxina B1 cuando vacas en periodo de lactancia comen pienso contaminado. Se segrega con la leche y también puede estar presente en el queso y otros productos lácteos. La aflatoxina M1 es relativamente estable frente al proceso de pasteurización, de modo que no solo se precisa un amplio control rutinario en las materias primas que se van a procesar, sino también en los productos finales.
Con el fin de proteger a los consumidores frente a los efectos dañinos de las aflatoxinas, muchos países han especificado valores límite. Los alimentos que superan estos niveles máximos permitidos no se deben comercializar. De acuerdo con la normativa n.º 1881/2006 de la UE, el valor límite es de 4 µg/kg (contenido total de aflatoxina). Para garantizar que los alimentos producidos no superen este valor límite, se deben llevar a cabo análisis regulares.
