Alimentos preparados
Los alimentos preparados y los platos precocinados se deben analizar para detectar numerosos parámetros con el fin de obtener productos alimentarios seguros y de alta calidad.
El mercado de los platos precocinados está creciendo, y cada vez más platos preparados, salsas, aperitivos y sopas instantáneas se ponen a disposición del consumidor. Los kits de ensayo R-Biopharm se pueden aplicar durante todo el proceso de producción: desde las materias primas pasando por los productos intermedios y los productos finales, desde la inspección de los productos de entrada al control de la higiene y, por último, al análisis de productos para garantizar su correcto etiquetado. Nuestra amplia gama de productos en diferentes formatos de ensayo se puede utilizar para analizar incluso matrices complejas, como sopas, salsas, aderezos, productos panificados, mezclas para panificar, pizza, pasta, cereales, salchichas, productos de pastelería, chocolate, helado, aperitivos, margarina, mezcla de especias, alimentos infantiles y otros alimentos procesados.
Control de la higiene
Los microorganismos pueden provocar graves enfermedades de origen alimentario. Por tanto, el control de patógenos y organismos que causan deterioro durante toda la cadena de producción es crucial para garantizar la protección del consumidor y estabilidad del producto. Los ensayos microbiológicos permiten controlar la higiene en las superficies de los entornos de producción, así como analizar los alimentos preparados.
Alérgenos
Incluso en pequeñas cantidades, los alérgenos son un riesgo para las personas alérgicas. Aunque los ingredientes alergénicos se deben especificar en la etiqueta en la mayoría de los países, la contaminación accidental durante el almacenamiento y la producción debido a transferencia es muy frecuente. La gran longitud de la cadena de producción provoca un gran riesgo de contaminación cruzada en los alimentos preparados. Los fabricantes deben, por lo tanto, analizar sus productos para determinar el contenido de alérgenos a fin de garantizar un etiquetado correcto y evitar retiradas de producto.
Adulteración de alimentos
La especificación de la especie animal es de interés especial: Los productos cárnicos se pueden falsificar por medio de una declaración incorrecta (como en el escándalo de la carne de caballo). En ocasiones se falsea la declaración de productos cárnicos, de pescado o lácteos de calidad inferior, lo que puede desorientar al consumidor. En ocasiones puede realizarse con intención delictiva, aunque los daños financieros derivados, así como los daños a la reputación, pueden ser enormes para el distribuidor. Los ensayos de PCR en tiempo real permiten determinar el verdadero origen del producto alimentario.
Micotoxinas
Los cereales y otros productos agrícolas a menudo se contaminan con micotoxinas, como aflatoxina, ocratoxina o DON. Al producir alimentos preparados a partir de cereales, como pizza o pasta, los productos de entrada se deben analizar exhaustivamente para detectar micotoxinas. Unos métodos de cribado fiables son indispensables para que los fabricantes puedan cumplir la normativa y garantizar productos toxicológicamente seguros.
Azúcares, ácidos y otros componentes
Las enzimas ofrecen métodos de cuantificación de alta especificidad y sensibilidad para muchas sustancias presentes en los productos alimentarios. Los indicadores pertinentes de calidad de los alimentos preparados incluyen ácido cítrico (que a menudo se utiliza como conservante), ácido acético, ácido ascórbico, ácido láctico, ácido succínico, ácido glutámico, glucosa, fructosa, sacarosa, lactosa, maltosa, nitrato, etanol y almidón.
