Carne

Durante la elaboración de productos cárnicos, para obtener productos seguros y de alta calidad es necesario controlar y supervisar numerosos pasos.

Los kits de ensayo R-Biopharm se pueden aplicar durante todo el proceso de producción de alimentos: desde las materias primas pasando por los productos intermedios hasta los productos finales, desde la inspección de los productos de entrada al control de la higiene y, por último, al análisis de productos para garantizar su correcto etiquetado. Nuestra amplia gama de formatos de ensayo se puede utilizar para analizar carne cruda (ternera, cerdo, aves de corral), salchichas, jamón, tejido comestible, matrices de control (por ejemplo, pelo) y un largo etcétera.

Antibióticos

El uso incorrecto o ilegal de antibióticos en el ganado puede generar residuos en la carne y los productos cárnicos que suponen un riesgo para la salud de los consumidores. Además, el uso inapropiado de antibióticos contribuye a la multirresistencia de las bacterias patógenas. La normativa de la Comisión (UE) N.º 37/2010 define los niveles permitidos de antibióticos en alimentos de origen animal como la carne (músculos): 100 μg/kg de tetraciclina, 500 μg/kg de estreptomicina, 150 μg/kg de bacitracina y niveles de tolerancia cero para cloranfenicol.

Hormonas y anabólicos

Los residuos hormonales y anabólicos en la carne pueden suponer un riesgo para la salud de los consumidores. Como consecuencia, en la mayoría de los países se ha prohibido completamente el uso de hormonas y anabolizantes en la cría de ganado, excepto para uso veterinario.

Control de la higiene

Microorganismos como listeria, salmonella, CampylobacterE. coli o Staphylococcus aureus pueden provocar enfermedades de origen alimentario. Además, es importante controlar los organismos que suelen provocar deterioro con el fin de reducir las pérdidas durante la producción y garantizar la estabilidad del producto hasta el periodo de validez declarado.

Micotoxinas

La carne y los productos cárnicos pueden estar contaminados con ocratoxina A. Este metabolito tóxico secundario producido por mohos se puede acumular en diversos productos agrícolas. En la carne, la contaminación se produce al alimentar a los animales mediante pienso contaminado con ocratoxina A. La carne contaminada puede suponer un riesgo para la salud humana.

Adulteración de alimentos

Factores como la variación de precios y la disponibilidad de los productos cárnicos de diferentes especies animales (por ejemplo, ternera, caballo) se pueden aprovechar para realizar una declaración incorrecta de los componentes cárnicos. La identificación de las especies animales es, como consecuencia, de máxima importancia en el control de calidad. Además, la determinación de la especie animal también puede ser necesaria por motivos religiosos (dietas halal y kosher). Para evitar fraudes y daños financieros, los fabricantes deben analizar sus productos mediante ensayo de PCR en tiempo real.

Ácidos, azúcares y otros componentes

Los ácidos y azúcares se utilizan a menudo como aditivos en la producción de carne. Por ejemplo, el ácido láctico y el ácido acético se agregan a los productos cárnicos para incrementar la estabilidad microbiológica. El ácido ascórbico se emplea como agente de enrojecimiento y antioxidante. El ácido cítrico facilita el pelado de las salchichas y actúa como estabilizante de color, sabor y aroma. El ácido glutámico intensifica el sabor. Sustancias como glucosa, fructosa, lactosa y maltosa se utilizan como saborizantes y conservantes. La determinación del contenido de ácido y azúcar es, por lo tanto, muy importante en la producción de carne.

Alérgenos

Las mezclas de especias utilizadas en la producción de las salchichas u otros productos cárnicos pueden contener apio, gluten, mostaza, frutos secos, leche y otros ingredientes que pueden provocar alergia o intolerancia. En la mayoría de los países es obligatorio especificar en la etiqueta los ingredientes que pueden provocar alergia e intolerancia. Sin embargo, la contaminación accidental es muy frecuente. Por este motivo, los fabricantes deben analizar sus productos con el fin de garantizar un etiquetado correcto y evitar la retirada de productos.
