Pescado y mariscos

Desde la piscicultura al procesado, el pescado y los mariscos deben someterse a análisis exhaustivos para obtener productos seguros y de alta calidad.

Los kits de ensayo R-Biopharm se pueden aplicar durante todo el proceso de producción: desde las materias primas hasta los productos finales, desde la inspección de los productos de entrada al control de la higiene y, por último, al análisis de productos para garantizar su correcto etiquetado. Nuestra amplia gama de formatos de ensayo se puede utilizar para analizar pescado crudo, pescado enlatado y marisco, como gambas y mejillones.

Antibióticos, hormonas y anabólicos

Las hormonas y anabólicos como la metiltestosterona se pueden utilizar para procesos de reversión sexual con el fin de aumentar el ritmo de crecimiento en la población de género masculino. Los residuos de estas sustancias pueden suponer un riesgo para la salud de los consumidores. Por este motivo, el uso de hormonas y anabólicos en acuicultura está completamente prohibido en la mayoría de los países, excepto para uso veterinario. Los residuos de los productos de pesca y acuicultura también pueden deberse al uso incorrecto o ilegal de antibióticos que suponen un riesgo para la salud de los consumidores. Además, el uso inapropiado de antibióticos contribuye a la multirresistencia de las bacterias patógenas.

Micotoxinas

Los piensos de acuicultura de origen vegetal conllevan un alto riesgo de contaminación con micotoxinas, especialmente en países con climas tropicales húmedos. Las micotoxinas son metabolitos tóxicos secundarios producidos por mohos y se pueden acumular en diversos productos agrícolas. Las micotoxinas tienen efectos negativos sobre las poblaciones de peces vivos, como índices de crecimiento deficientes, baja ganancia de peso corporal y alta mortalidad, dependiendo de la especie de pescado y la micotoxina. Por lo tanto, una evaluación de riesgos apropiada es importante para minimizar la exposición de los acuicultivos a las micotoxinas y evitar pérdidas económicas.

Patógenos, organismos que causan deterioro, toxinas bacterianas y virus

Los productos de pesca son un entorno favorable para bacterias como ListeriaSalmonellaVibrio o Clostridium, que pueden provocar enfermedades de origen alimentario graves. Las toxinas, levaduras y virus también pueden estar presentes en los productos de pesca; en especial, existe riesgo de contaminación por norovirus en el caso de los mejillones. Por tanto, el control de patógenos durante toda la cadena de producción es crucial para garantizar la protección del consumidor y estabilidad del producto.

Identificación de especies ícticas

Las etiquetas de pescado deben incluir la designación comercial de la especie y su nombre científico, de acuerdo con la normativa de la UE 1379/2013 sobre la organización habitual de los mercados en productos de pesca y acuicultura. La normativa también indica que, a efectos de protección del consumidor, las autoridades nacionales deben aprovechar toda la tecnología disponible, incluidas pruebas de ADN. Para garantizar el correcto etiquetado y evitar daños financieros, tanto las empresas como las agencias gubernamentales pueden confiar en los kits de PCR en tiempo real de alta sensibilidad y especificidad que ofrece R-Biopharm.

Ácidos y otros componentes

Los ácidos orgánicos afectan a la tasa de crecimiento de bacterias patógenas en los alimentos. El uso del ácido láctico y el acetato como conservantes y antioxidantes está muy extendido en el pescado, mientras que los sulfitos se utilizan habitualmente como conservantes en las gambas. Cuando los conservantes se inyectan en el pescado, la concentración se conoce de forma precisa. Sin embargo, si se sumerge en una solución, será necesario comprobar la concentración en el tejido. Además, los ácidos orgánicos naturales como el ácido láctico desempeñan un importante papel si están presentes en la flora bacteriana. Puesto que existen límites legales en función del país, la concentración de ácidos y otros conservantes se debe comprobar en el producto final.

Histamina

La histamina se genera en el pescado durante el almacenamiento y puede superar niveles de 1000 mg/kg. En varios países se han establecido niveles de tolerancia máxima para la histamina debido a que pueden provocar enfermedades a los seres humanos (lo que se denomina habitualmente “intoxicación por escombroides”). El valor límite en el pescado y los productos de pesquería es de entre 50 y 200 mg/kg dependiendo de la especie íctica. Algunas especies como atún, caballa, sardina y anchoa contienen niveles elevados de histamina. El pescado de buena calidad debe contener menos de 10 mg/kg de histamina.
