Productos lácteos
Desde la producción lechera hasta el producto final, es necesario controlar y supervisar muchos pasos para obtener productos seguros y de alta calidad.
Los kits de ensayo R-Biopharm se pueden aplicar durante todo el proceso de producción de productos lácteos: desde las materias primas pasando por los productos intermedios hasta los productos finales, desde la inspección de los productos de entrada al control de la higiene y, por último, al análisis de productos para garantizar su correcto etiquetado. Nuestra amplia gama de diferentes formatos de ensayo se puede emplear para analizar leche y leche en polvo, queso, yogur y otros muchos productos lácteos.
Control de la higiene
Los productos lácteos contienen microorganismos de muy diverso tipo. En muchos casos, la presencia de bacterias es deseable, e incluso necesaria (como en la producción de queso). Sin embargo, algunos microorganismos, como Salmonella, Listeria, E. coli, Staphylococcus aureus o Bacillus cereus son patogénicos y pueden provocar enfermedades de origen alimentario. Además, es importante controlar los organismos que suelen provocar deterioro con el fin de reducir las pérdidas durante la producción y garantizar la estabilidad del producto hasta el periodo de validez declarado.
Micotoxinas
Cuando animales lactantes reciben pienso contaminado con aflatoxina, la leche se segrega con aflatoxina M1 potencialmente tóxica. La aflatoxina M1 es relativamente estable durante el tratamiento térmico y el procesamiento de la leche, por lo que se recomienda analizar tanto la leche cruda como el producto final.
Antibióticos
Además del riesgo potencial para la salud de los consumidores, los residuos de antibióticos suponen un riesgo económico, ya que pueden inhibir los procesos de producción biotecnológica en los que intervienen microorganismos. La normativa de la Unión Europea N.º 37/2010 define los niveles permitidos de antibióticos en los alimentos de origen animal, por ejemplo, en leche, 4 ppb de penicilina, 100 ppb de tetraciclina y niveles de tolerancia cero al cloranfenicol.
Adulteración de alimentos
La leche es uno de los alimentos más adulterados habitualmente. Puede utilizar nuestros kits de ensayo de alta sensibilidad para identificar los productos lácteos adulterados por motivos económicos.
Alérgenos
Millones de personas deben tomar precauciones en cuanto al consumo de leche y productos lácteos debido a la intolerancia a la lactosa. En la mayoría de los países es obligatorio especificar en la etiqueta los ingredientes que pueden provocar alergia e intolerancia. Sin embargo, la contaminación accidental es muy frecuente. Por este motivo, los fabricantes deben analizar sus productos con el fin de garantizar un etiquetado correcto y evitar la retirada de productos.
Azúcares, ácidos y otros componentes
El análisis enzimático es una herramienta muy valiosa para la identificación de muchas sustancias presentes en la leche y el queso, como lactosa, ácido láctico, ácido glutámico, amoníaco, nitrato o etanol. Numerosos métodos enzimáticos han sido aprobados o validados por organizaciones internacionales como la AOAC (por ejemplo, método oficial 984.15, lactosa en leche), la International Dairy Federation (IDF 34C, ácido cítrico en queso y leche) e ISO (ISO 11285, lactulosa en leche).
Vitaminas
Los productos lácteos a menudo se enriquecen con vitaminas para garantizar un suministro suficiente a la población. Los fabricantes deben asegurarse de que el contenido de vitaminas naturales y añadidas coincida con la etiqueta del envase hasta que se alcance la fecha de caducidad declarada.
