Por otra parte, los enterococos se utilizan espec\u00edficamente como cultivos iniciadores para procesos de fermentaci\u00f3n de diversos alimentos. Se afirma que los enterococos desempe\u00f1an un importante papel en el desarrollo de las propiedades organol\u00e9pticas de los alimentos fermentados. En el agua, la presencia de enterococos se utiliza como indicador de contaminaci\u00f3n fecal. Los enterococos solo aparecen si el agua est\u00e1 contaminada con heces humanas o animales.<\/p>\n<\/div><div class=\"block-tabs__content  tab--5\"><p>Las levaduras y mohos son capaces de contaminar los alimentos y responsables del deterioro r\u00e1pido de los productos alimentarios infestados. Debido a su capacidad de producci\u00f3n de sustancias t\u00f3xicas o alerg\u00e9nicas, existe una especial predisposici\u00f3n a que se conviertan en un riesgo para la salud. Estos organismos se pueden extender r\u00e1pidamente a trav\u00e9s del polvo y los aerosoles. Por este motivo, las superficies del entorno de producci\u00f3n se contaminar\u00e1n regularmente.
