De este modo, la carne de alta calidad se sustituye con carne m\u00e1s barata. Por ejemplo, el esc\u00e1ndalo de la carne de caballo de Alemania, que tuvo una gran repercusi\u00f3n p\u00fablica, donde se detect\u00f3 carne de caballo en lugar de carne de vacuno en una marca de lasa\u00f1a. En Gran Breta\u00f1a tambi\u00e9n se detect\u00f3 ADN de caballo en hamburguesas de vacuno. La adici\u00f3n de ingredientes incorrectos a los alimentos, debido a la falta de escr\u00fapulos por parte de los comerciantes o la negligencia durante el procesamiento, exige una supervisi\u00f3n constante por parte de las autoridades sanitarias. Durante el procesamiento en el matadero, no siempre es posible determinar al 100&nbsp;% el origen animal concreto de cada producto c\u00e1rnico. Esto se aplica tanto a la carne picada y a otros alimentos derivados de carne procesada como a los productos de pienso que contienen carne. De ah\u00ed que exista riesgo de cierta alteraci\u00f3n de los productos. Estas alteraciones se pueden detectar de forma espec\u00edfica mediante PCR en tiempo real y cuantificar de forma relativa (con porcentajes de la especie animal respectiva en relaci\u00f3n con la cantidad total de carne).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Identificaci\u00f3n de especie animal debido a prescripciones religiosas (halal y kosher)<\/h2>\n\n\n\n<p>Es especialmente importante para los consumidores musulmanes y jud\u00edos tener la certeza de que los alimentos aprobados para consumo y preparados de acuerdo con sus creencias respectivas (alimentos \u201chalal\u201d o \u201ckosher\u201d) est\u00e1n completamente libres de contaminaci\u00f3n. Con el fin de cumplir las expectativas de estos grupos de consumidores (el 23&nbsp;% de la poblaci\u00f3n mundial) existen ensayos PCR que permiten detectar espec\u00edficamente el origen de la carne (carne de vacuno, aves de corral, cerdo o cordero, por ejemplo). Las investigaciones realizadas por motivos religiosos, en concreto en relaci\u00f3n con el cerdo en productos c\u00e1rnicos o alimentos procesados, no incluyen ning\u00fan valor de umbral t\u00e9cnico (tolerancia cero). Esto significa que para la detecci\u00f3n de la carne de cerdo se necesitan ensayos puramente cualitativos y especialmente sensibles.
