Como resultado de diversos errores de aplicaci\u00f3n (como el incumplimiento del periodo de espera reglamentario o el abuso de antibi\u00f3ticos promotores del crecimiento), pueden aparecer residuos de antibi\u00f3tico en alimentos de origen animal, como carne, leche o huevos.<\/p>\n\n\n\n<p>Debido a las propiedades potencialmente carcinog\u00e9nicas y t\u00f3xicas de los residuos de antibi\u00f3tico y a su potencial al\u00e9rgico, el consumo de alimentos contaminados supone un riesgo directo para la salud p\u00fablica. Gracias a la inhibici\u00f3n de la s\u00edntesis de la pared celular, presenta un efecto bactericida de amplio espectro frente a bacterias tanto gram-positivas como gram-negativas. Adem\u00e1s de la aplicaci\u00f3n veterinaria, la bacitracina se puede utilizar como promotor del crecimiento antimicrobiano en la cr\u00eda de animales. Por lo tanto, pueden permanecer residuos en alimentos de origen animal y suponer un riesgo de salud para los consumidores. El uso incorrecto de los antibi\u00f3ticos tambi\u00e9n favorece la formaci\u00f3n de bacterias resistentes a los antibi\u00f3ticos, lo que agrava un problema de salud p\u00fablica ya de por s\u00ed preocupante. Como consecuencia, en el reglamento 2821\/98\/CE la bacitracina se ha eliminado de la lista de aditivos alimentarios animales aprobados (Directiva 70\/524\/CEE Ap\u00e9ndice B) y se han definido l\u00edmites residuales m\u00e1ximos en los productos alimentarios (Reglamento 37\/2010\/CE).<\/p>\n<\/div><div class=\"block-tabs__content  tab-residuestabs1-2\"><p>Las quinolonas son una familia de antibi\u00f3ticos sint\u00e9ticos de amplio espectro. Inhiben la enzima girasa y, por lo que tambi\u00e9n se conocen como inhibidores de la girasa<\/p>\n<p>Los inhibidores de la girasa se dividen en cuatro subgrupos. La mayor\u00eda de las quinolonas pertenecen al subgrupo de la fluoroquinolonas, que cuentan con un grupo fl\u00faor en el sistema de anillo central, por lo general en la sexta posici\u00f3n. Las fluoroquinolonas pertenecen a las llamadas quinolonas de segunda generaci\u00f3n. Algunos de estos f\u00e1rmacos se aceptan como antibi\u00f3ticos en medicina veterinaria para animales destinados a la producci\u00f3n de alimentos. Las fluoroquinolonas son antibi\u00f3ticos de amplio espectro frente a numerosas especies bacterianas. Con frecuencia se emplean en medicina veterinaria, especialmente en la cr\u00eda de ganado vacuno y porcino y aves de corral. El uso de fluoroquinolonas se ha incrementado en los \u00faltimos a\u00f1os a causa de la gran cantidad de estos antibi\u00f3ticos administrados para prevenir enfermedades infecciosas, especialmente en la cr\u00eda de aves de corral y ganado porcino y de pescado\/gambas. Su uso extendido en animales destinados a la producci\u00f3n de alimentos ha generado resistencia microbiana. Esto ha dado lugar a una enmienda de la normativa del Consejo (CEE) N.\u00ba 2377\/90 y a la introducci\u00f3n de l\u00edmites m\u00e1ximos de residuos (LMR) para varias fluoroquinolonas.<\/p>\n<\/div><div class=\"block-tabs__content  tab-residuestabs1-3\"><p>El cloranfenicol es un antibi\u00f3tico de amplio espectro que se emplea a menudo en la producci\u00f3n animal por sus excelentes propiedades antibacterianas y farmacocin\u00e9ticas. Sin embargo, en los seres humanos provoca efectos secundarios hematot\u00f3xicos, en especial, anemia apl\u00e1sica inducida por cloranfenicol, para los que todav\u00eda no se ha establecido una relaci\u00f3n efecto-dosis. Esto ha dado lugar a la prohibici\u00f3n del cloranfenicol para el tratamiento de animales utilizados en la producci\u00f3n de alimentos.<\/p>\n<p>El cloranfenicol (2,2-Dicloro-N-[(1R,2R)-1,3-dihidroxi-1-(4-nitrofenil)propan-2-il]acetamida), producido por la cepa Streptomyces venezuelae, se descubri\u00f3 en 1947 y desde la d\u00e9cada de 1950 se utiliza en medicina veterinaria. En la actualidad, la administraci\u00f3n del antibi\u00f3tico de amplio espectro cloranfenicol (CAP) se considera ilegal en animales destinados a la producci\u00f3n de alimentos en la UE y en muchos pa\u00edses del mundo. Se sigue empleando con frecuencia en la producci\u00f3n animal debido a sus excelentes propiedades antibacterianas y farmacocin\u00e9ticas y bajo precio. El mecanismo de acci\u00f3n del cloranfenicol es de tipo bacteriost\u00e1tico, ya que inhibe la s\u00edntesis de prote\u00ednas en los ribosomas bacterianos. En los seres humanos, los residuos del CAP pueden provocar mielosupresi\u00f3n (da\u00f1os en la m\u00e9dula \u00f3sea) y anemia apl\u00e1sica inducida por cloranfenicol, una enfermedad potencialmente mortal. No se pudo establecer ning\u00fan nivel de residuos seguro para estos efectos secundarios. Con el fin de garantizar la salud del consumidor, se ha prohibido por completo el uso del cloranfenicol para el tratamiento de animales utilizados para producci\u00f3n de alimentos y se ha establecido un nivel de tolerancia cero para residuos de cloranfenicol. La UE estableci\u00f3 un l\u00edmite m\u00ednimo de funcionamiento exigido de 0,3 ppb en todos los sistemas de ensayo.<\/p>\n<p>La estructura qu\u00edmica del cloranfenicol tiene 8 estereois\u00f3meros, de los que solo uno (RR-p-CAP) es biol\u00f3gicamente activo. El ensayo ELISA cuantitativo RIDASCREEN\u00ae Chloramphenicol est\u00e1 validado para una amplia variedad de matrices (leche, leche en polvo y productos l\u00e1cteos, miel, carne, pescado, gambas, huevos, pienso, plasma y suero). Tambi\u00e9n se utilizan como promotores del crecimiento en la producci\u00f3n de gamba y la cr\u00eda de aves de corral y ganado porcino.<\/p>\n<p>Los experimentos a largo plazo realizados en animales han demostrado que los compuestos principales y sus metabolitos tienen caracter\u00edsticas carcinog\u00e9nicas y mutag\u00e9nicas. Esto ha dado lugar a la prohibici\u00f3n de los nitruforanos para el tratamiento de animales utilizados en la producci\u00f3n de alimentos. En 1993, la UE prohibi\u00f3 el uso de varios nitrofuranos (furaltadona, nitrofurantoina y nitrofurazona) en animales destinados a uso alimentario, y en 1995 tambi\u00e9n se prohibi\u00f3 el uso de la furazolidona. El an\u00e1lisis de los nitrofuranos se basa en la detecci\u00f3n de los metabolitos de nitrofuranos en tejido. Los compuestos principales son dif\u00edciles de detectar de forma precisa, ya que se metabolizan con mucha rapidez despu\u00e9s del tratamiento. Por motivos de protecci\u00f3n al consumidor y seguridad de los procesos en la industria l\u00e1ctea, la normativa de la Comisi\u00f3n (UE) N.\u00ba 37\/2010 estableci\u00f3 l\u00edmites m\u00e1ximos de residuos (LMR) para 7 penicilinas en alimentos de origen animal.<\/p>\n<\/div><div class=\"block-tabs__content  tab-residuestabs1-6\"><p>Adem\u00e1s de los \u03b2-lact\u00e1micos, la estreptomicina es uno de los antibi\u00f3ticos m\u00e1s utilizados para el tratamiento de la mastitis en medicina veterinaria. De ah\u00ed que puedan existir residuos de estreptomicina en los alimentos de origen animal si el periodo de descarte no se cumple o se aplica de forma inadecuada.<\/p>\n<p>En concentraciones elevadas, la estreptomicina provoca efectos otot\u00f3xicos y nefrot\u00f3xicos. La exposici\u00f3n cr\u00f3nica de los seres humanos a bajas concentraciones en los alimentos puede provocar alergias, afectar negativamente a la flora intestinal e inducir resistencia de los microorganismos patog\u00e9nicos. Para evitar los riesgos para la salud del consumidor y problemas de tecnolog\u00eda alimentaria, es necesario un m\u00e9todo sencillo y de alta sensibilidad para la detecci\u00f3n de la estreptomicina. La normativa de la UE sobre la estreptomicina especifica l\u00edmites m\u00e1ximos de residuos (LMR) para la carne y la leche (m\u00fasculo e h\u00edgado: 500 ppb, ri\u00f1\u00f3n: 1000 ppb, miel: 10 ppb y leche: 200 ppb).<\/p>\n<\/div><div class=\"block-tabs__content  tab-residuestabs1-7\"><p>El uso de las sulfonamidas como aditivo en piensos est\u00e1 muy extendido, principalmente para el cebado de terneros y cerdos. Combinados con inhibidores de la dihidrofolato reductasa, como la trimetoprima, tetroxoprima o pirimetamina, las sulfonamidas tambi\u00e9n se utilizan en medicina veterinaria para el tratamiento de infecciones intestinales, mastitis, pulmonitis y otras enfermedades (sist\u00e9micas). Por lo tanto, puede haber presentes residuos de sulfonamida en alimentos de origen animal como la carne y la leche. En concreto, la transmisi\u00f3n de la sulfametazina, un posible carcin\u00f3geno, representa una amenaza para la salud humana. Fue la primera sustancia antibi\u00f3tica del grupo de las tetraciclinas.<\/p>\n<p>El uso veterinario de la tetraciclina, clortetraciclina y oxitetraciclina est\u00e1 autorizado en todo el mundo. Por lo tanto, pueden surgir riesgos potenciales para el consumidor.
