Aliments préparés
Dans les aliments préparés et prêts à consommer, de nombreux paramètres doivent être testés afin d’obtenir des produits alimentaires sûrs et de haute qualité.
Le marché des plats pré-cuisinés ne cesse de se développer, tout comme le nombre d’aliments préparés, de sauces, d’encas et de soupes instantanées mis à la portée du consommateur. Les kits de test R-Biopharm peuvent être utilisés tout au long de la chaîne de production : des matières premières aux produits finis en passant par les étapes intermédiaires, de l’inspection des marchandises reçues à la surveillance de l’hygiène jusqu’à l’analyse des produits en vue de leur étiquetage approprié. Les différents formats des tests de notre gamme peuvent être utilisés pour analyser des matrices complexes telles que les soupes, les sauces, les vinaigrettes, les produits de boulangerie, les préparations pour pâtisserie, les pizzas, les pâtes alimentaires, les céréales, les saucisses, les confiseries, le chocolat, les glaces, les encas, la margarine, les mélanges d’aromates, les aliments pour bébés et toutes sortes d’autres produits alimentaires transformés.
Surveillance de l’hygiène
Les micro-organismes peuvent provoquer de graves maladies d’origine alimentaire. La surveillance des agents pathogènes et des organismes responsables de l’altération des aliments tout au long de la chaîne de production est donc cruciale pour assurer la protection du consommateur et la stabilité du produit. Les tests microbiologiques permettent de contrôler l’hygiène des surfaces dans l’environnement de production mais aussi d’analyser les produits alimentaires préparés.
Allergènes
Une toute petite quantité d’allergènes peut déjà représenter un risque pour les personnes allergiques. Même si, dans la plupart des pays, les ingrédients allergènes doivent figurer sur l’étiquette des produits, les problèmes de contamination involontaire dus au transfert restent cependant très courants pendant la production et le stockage. Le risque de contamination croisée des aliments préparés est d’autant plus élevé que la chaîne de production est longue. Les fabricants doivent donc tester leurs produits afin d’en assurer le bon étiquetage et d’éviter les rappels.
Fraude alimentaire
L’identification des espèces animales présente un grand intérêt : en effet, les produits carnés peuvent faire l’objet de déclarations frauduleuses comme lors du scandale de la viande de cheval. La viande, le poisson ou les produits laitiers de qualité inférieure peuvent faire l’objet de fausses déclarations induisant le consommateur en erreur. Qu’il s’agisse ou non d’un acte intentionnellement délictuel, le préjudice financier peut être très important pour le distributeur et sa réputation peut en souffrir. Les tests PCR en temps réel permettent de déterminer l’origine réelle d’un produit alimentaire.
Mycotoxines
Les céréales et autres produits agricoles sont souvent contaminés par des mycotoxines telles que l’aflatoxine, l’ochratoxine ou le déoxynivalénol (DON). Pour fabriquer des aliments préparés à base de céréales (pizzas ou pâtes alimentaires, par exemple), les produits reçus doivent donc faire l’objet d’un test rigoureux de dépistage des mycotoxines. Pour les fabricants, il est essentiel de s’appuyer sur des méthodes de screening fiables afin de satisfaire aux réglementations en vigueur et de garantir la sécurité des produits sur le plan toxicologique.
Sucres, acides et autres composants
Les méthodes de quantification à base d’enzymes procurent une grande sensibilité et une grande spécificité adaptées à de nombreuses substances présentes dans les produits alimentaires. Parmi les indicateurs pertinents de qualité des aliments préparés, citons l’acide citrique (souvent utilisé comme conservateur), l’acide acétique, l’acide ascorbique, l’acide lactique, l’acide succinique, l’acide glutamique, le glucose, le fructose, le saccharose, le lactose, le maltose, le nitrate, l’éthanol et l’amidon.
