Lors de la fabrication de jus de fruits, de boissons alcoolisées, d’eau potable ou d’autres boissons, nombreuses sont les étapes qui doivent être contrôlées et surveillées afin d’obtenir des produits sûrs et de haute qualité.
Les tests R-Biopharm sont utilisés tout au long de la chaîne de production des boissons : des matières premières aux produits finis en passant par les étapes intermédiaires comme la fermentation. Les différents formats proposés dans notre gamme peuvent être utilisés pour analyser les jus de fruits et les concentrés, les boissons alcoolisées (vins, bières, spiritueux), l’eau potable et les boissons non laitières (lait de soja ou lait d’amande par exemple).
Altération des boissons
Les organismes d’altération constituent un problème majeur, notamment dans le secteur des boissons. Les contaminations dues à des bactéries et à des levures susceptibles d’entraîner des altérations, telles que Lactobacillus brevis ou Saccharomyces diastaticus, peuvent avoir des répercussions significatives sur la qualité et le goût du produit, ce qui peut entraîner de lourdes conséquences financières. Nous proposons un large éventail de kits PCR en temps réel (rt-PCR) pour le dépistage et la détection rapides et spécifiques des paramètres d’altération microbiologiques des boissons.
Acides, sucres, alcools et additifs
La qualité du vin et de la bière repose sur plusieurs paramètres. Certains paramètres critiques (acide citrique, acide malique, acide acétique, acide ascorbique, acide lactique, glucose, fructose, saccharose, fer ou éthanol) peuvent être testés pendant la production afin de maitriser la qualité du produit fabriqué et pour vérifier des paramètres réglementés. Les méthodes d’analyse par voie enzymatique ont été validées par des organisations internationales telles que l’OIV (Office International du Vin), l’UE et l’AOAC.
Allergènes
Dans la plupart des pays, les ingrédients allergènes tels que le gluten, le lactose, le soja ou les fruits à coque doivent figurer sur l’étiquette des produits. Les problèmes de contamination involontaire restent cependant très courants pendant la production et le stockage des boissons. Les agents de collage utilisés dans le vin (protéines de lait (caséine), œufs (ovalbumine) ou lysozyme) peuvent également subsister dans le produit fini et doivent figurer sur l’étiquette. Le vin rouge contient également une forte teneur en histamine, laquelle peut être problématique pour le goût du produit et pour les personnes allergiques. Dans la bière dite « sans gluten », la teneur en gluten doit être testée afin de protéger les consommateurs.
Vitamines
De nombreuses boissons, en particulier les jus de fruits, sont enrichies en vitamines. Afin de répondre aux contraintes réglementaires et aux exigences des consommateurs en matières d’étiquetage, mais aussi de contrôler avec précision la teneur en vitamines ajoutées des jus en cours de fabrication, les entreprises doivent disposer de données précises sur les concentrations. La teneur en vitamine C peut diminuée pendant le stockage (jusqu’à 16 % d’acide ascorbique en moins). La teneur en vitamine du produit doit néanmoins correspondre à celle indiquée sur l’étiquette, et ce jusqu’à la fin de la durée de conservation déclarée.
Mycotoxines
Les céréales et les fruits peuvent être contaminés par des mycotoxines (métabolites toxiques produites par les moisissures). Ils doivent donc faire l’objet de tests avant d’être utilisés pour produire des boissons. L’ochratoxine A se trouve généralement dans le vin, tandis que les aflatoxines, la fumonisine et la vomitoxine souvent présentes dans les céréales vont retrouver dans les bières. La patuline peut contaminer les jus de pomme et les liqueurs à base de pomme. Compte tenu de leur fréquence et de leurs effets toxiques graves, les mycotoxines sont soumises à des teneurs maximales dans de nombreux pays; par exemple, 2 μg/kg d’ochratoxine A dans le vin dans les pays de l’Union européenne.
