The following spoilage bacteria and yeasts are of special interest in the wine industry and should be monitored:<\/p>\n\n\n<div class=\"acf-block block-tabs block-\"><div class=\"block-tabs__menu\"><button onclick=\"openTab(event, 'tab--1',  'block-')\" class=\"block-tabs__title active \">Brettanomyces<\/button><button onclick=\"openTab(event, 'tab--2',  'block-')\" class=\"block-tabs__title  \">Oenococcus oeni<\/button><button onclick=\"openTab(event, 'tab--3',  'block-')\" class=\"block-tabs__title  \">Pediococcus<\/button><button onclick=\"openTab(event, 'tab--4',  'block-')\" class=\"block-tabs__title  \">Pichia<\/button><button onclick=\"openTab(event, 'tab--5',  'block-')\" class=\"block-tabs__title  \">Saccharomyces<\/button><\/div><div class=\"block-tabs__area\"><div class=\"block-tabs__content active tab--1\"><p><em>Dekkera bruxellensis<\/em>\u00a0(anamorph\u00a0<em>Brettanomyces bruxellensis<\/em>) is a spoilage yeast in beverages, especially important for the wine industry, where it has been shown to produce high amounts of volatile phenols (4-ethylphenol and 4-ethylguaiacol) imparting off-flavors to red wines. The yeasts of the species\u00a0<em>Dekkera bruxellensis<\/em>\u00a0are responsible for serious economic losses in the wine industry owing to their ability to spoil wines by the production of ethylphenols. Some authorities consider \u201cbrett\u201d to be responsible for 90% of the spoilage problems in premium red wines. However, in the production of beer (especially craft beer or Belgian beer specialities),\u00a0<em>Dekkera bruxellensis<\/em>\u00a0is often not considered as contaminant, but as flavor enrichment.<\/p>\n<\/div><div class=\"block-tabs__content  tab--2\"><p>In wine production, the malolactic fermentation is supported by\u00a0<em>Lactobacillus<\/em>. During this process, the bacterium\u00a0<em>Oenococcus oeni<\/em>\u00a0can be added as highly specialized bacteria. It effects a transformation of malic acid into milder lactic acid. However, depending on the desired type of wine, the presence of\u00a0<em>Oenococcus oeni<\/em>\u00a0may also be undesirable.<\/p>\n<\/div><div class=\"block-tabs__content  tab--3\"><p><em>Pediococcus<\/em>\u00a0is a genus of gram-positive lactic acid bacteria which are considered as contaminant in wine and beer. However, in some beer styles, the presence of\u00a0<em>Pediococcus<\/em>\u00a0may be desired.<\/p>\n<\/div><div class=\"block-tabs__content  tab--4\"><p><em>Pichia<\/em>\u00a0is a genus of yeasts in the family\u00a0<em>Saccharomycetaceae<\/em>. It is used in the fermentation process in winemaking, but it can spoil wine when present in high quantities.\u00a0<em>Pichia<\/em>\u00a0may also cause turbidity and off-flavors in beer.<\/p>\n<\/div><div class=\"block-tabs__content  tab--5\"><p><em>Saccharomyces<\/em>\u00a0is a genus of fungi including various species of yeasts. One of the best known species is\u00a0<em>Saccharomyces cerevisiae<\/em>\u00a0which is used in the production of beer, wine or bread.
