Dans un environnement de production de denr\u00e9es alimentaires ou dans les aliments solides, la d\u00e9tection de bact\u00e9ries coliformes de surface indique que les conditions d\u2019hygi\u00e8ne des processus de production doivent \u00eatre optimis\u00e9es. Le terme \u00ab bact\u00e9ries coliformes \u00bb ne d\u00e9signe pas un sous-groupe taxonomique des eubact\u00e9ries ; il s\u2019agit plut\u00f4t d\u2019un ensemble regroupant diff\u00e9rents genres de la famille des ent\u00e9robact\u00e9ries. Dans des conditions ana\u00e9robies, les levures transforment les sucres en alcool et en CO2. Ces facult\u00e9s sont utilis\u00e9es dans les secteurs brassicole et vinicole ainsi qu\u2019en boulangerie. La souche de Saccharomyces cerevisiae est la plus couramment utilis\u00e9e \u00e0 des fins industrielles. En termes d\u2019alt\u00e9ration des aliments, les germes du genre Candida jouent un r\u00f4le majeur. On les trouve dans les muqueuses humaines et animales (nez, gorge).<\/p>\n<p>Le terme \u00ab\u00a0moisissure\u00a0\u00bb est couramment utilis\u00e9 pour d\u00e9signer la partie visible du champignon, pr\u00e9sente \u00e0 la surface des aliments contamin\u00e9s. Sous la surface, le champignon forme du myc\u00e9lium qui ne peut \u00eatre distingu\u00e9 \u00e0 l\u2019\u0153il nu. Comme les levures, certaines moisissures sont utilis\u00e9es \u00e0 des fins industrielles (pour fabriquer du fromage, par exemple). Il existe aussi des genres de moisissures toxiques, capables de produire des toxines (mycotoxines).
