De par leur forte teneur en prot\u00e9ines (35 \u00e0 42&nbsp;%), les lupins sont de plus en plus utilis\u00e9s comme additifs alimentaires dans les encas, les p\u00e2tes alimentaires, le pain, les biscuits, le caf\u00e9 et certains plats v\u00e9g\u00e9tariens pr\u00e9-cuisin\u00e9s pour stabiliser la texture et obtenir un co\u00fbt comparable \u00e0 celui du soja.<\/p>\n\n\n\n<p>Le lupin est un ingr\u00e9dient tr\u00e8s polyvalent&nbsp;: il est g\u00e9n\u00e9ralement utilis\u00e9 comme source de prot\u00e9ines naturelles \u00e0 la place du soja et d\u2019autres produits d\u2019origine animale ou \u00e0 base de viande dans l\u2019alimentation humaine et animale. Capable de lier l\u2019eau dans les aliments, le lupin peut donc remplacer l\u2019\u0153uf dans le pain et les produits de boulangerie, ce qui accro\u00eet la fra\u00eecheur et la stabilit\u00e9 des produits en question. Dans certains aliments di\u00e9t\u00e9tiques, la farine de lupin est \u00e9galement utilis\u00e9e \u00e0 la place de la farine de bl\u00e9, de seigle ou d\u2019orge.<\/p>\n\n\n\n<p>Parall\u00e8lement \u00e0 leur utilisation accrue, des r\u00e9actions allergiques IgE-m\u00e9di\u00e9es ont \u00e9t\u00e9 rapport\u00e9es depuis 2000 et des r\u00e9actions crois\u00e9es ont \u00e9t\u00e9 observ\u00e9es chez les personnes allergiques aux arachides. Les lupins pouvant provoquer des r\u00e9actions allergiques graves, ils doivent figurer parmi les ingr\u00e9dients des produits alimentaires.&nbsp;L\u2019allerg\u00e8ne peut \u00eatre pr\u00e9sent sous forme d\u2019ingr\u00e9dient ou suite \u00e0 une contamination des produits crus et cuits.<\/p>\n\n\n\n<p>En 2007, le lupin a \u00e9t\u00e9 ajout\u00e9 \u00e0 la liste des huit allerg\u00e8nes majeurs d\u00e9j\u00e0 r\u00e9glement\u00e9s par la l\u00e9gislation europ\u00e9enne (2007\/68\/CE, annexe&nbsp;IIIa).
