La forte progression de l\u2019ent\u00e9rite \u00e0 <em>Campylobacter<\/em> est favoris\u00e9e par la diffusion \u00e0 grande \u00e9chelle de la bact\u00e9rie chez diff\u00e9rentes esp\u00e8ces d\u2019animaux sauvages, d\u2019\u00e9levage ou de compagnie (oiseaux et mammif\u00e8res). Bact\u00e9rie commensale pr\u00e9sente dans l\u2019intestin des volailles, <em>Campylobacter<\/em>atteint la cha\u00eene alimentaire humaine par leur biais. D\u2019autres produits alimentaires comme le lait, la viande hach\u00e9e et l\u2019eau potable peuvent \u00e9galement servir de voies de transmission pour les agents pathog\u00e8nes. Lib\u00e9r\u00e9 dans l\u2019environnement par de nombreux h\u00f4tes et en grande quantit\u00e9, <em>Campylobacter<\/em> atteint le corps humain via les aliments contamin\u00e9s. Pour contracter une ent\u00e9rite \u00e0 Campylobacter, la dose infectieuse est relativement faible. Il suffit d\u2019environ 500\u00a0germes pour que l\u2019infection se d\u00e9clare. Environ 15\u00a0esp\u00e8ces connues de <em>Campylobacter<\/em> (<em>C. jejuni<\/em> et <em>C. coli<\/em>, notamment) sont consid\u00e9r\u00e9es comme provoquant la gastro-ent\u00e9rite humaine.<\/p>\n<\/div><div class=\"block-tabs__content  tab--2\"><p>Omnipr\u00e9sentes dans l\u2019environnement, les bact\u00e9ries du genre <em>Clostridium<\/em> sont productrices de spores et gram-positives. Certaines esp\u00e8ces de <em>Clostridium<\/em> sont d\u2019importants agents pathog\u00e8nes\u00a0; c\u2019est le cas des bact\u00e9ries <em>Clostridium botulinum<\/em>, <em>Clostridium perfringens<\/em> et <em>Clostridium estertheticum<\/em>. Elles peuvent entra\u00eener une contamination des aliments insuffisamment r\u00e9frig\u00e9r\u00e9s, ce qui peut provoquer des maladies graves. R\u00e9sistantes \u00e0 la chaleur, ces bact\u00e9ries peuvent \u00e9galement \u00eatre contenues dans les produits alimentaires bien r\u00e9chauff\u00e9s.<\/p>\n<\/div><div class=\"block-tabs__content  tab--3\"><p>Les l\u00e9gionnelles, ou <em>Legionella<\/em>, sont des bact\u00e9ries gram-n\u00e9gatives en forme de b\u00e2tonnets qui vivent dans l\u2019eau. Elles sont consid\u00e9r\u00e9es comme potentiellement pathog\u00e8nes pour l\u2019homme. Parmi les esp\u00e8ces de <em>Legionella<\/em>, <em>Legionella pneumophila<\/em> est la principale responsable des maladies contract\u00e9es par l\u2019homme\u00a0; elle est \u00e0 l\u2019origine de la maladie dite du l\u00e9gionnaire (ou l\u00e9gionellose). La maladie est g\u00e9n\u00e9ralement transmise par absorption d\u2019eau potable contamin\u00e9e.<\/p>\n<\/div><div class=\"block-tabs__content  tab--4\"><p>Les bact\u00e9ries du genre <em>Listeria<\/em> sont pr\u00e9sentes pratiquement partout. Le risque de contamination peut \u00eatre \u00e9valu\u00e9 par d\u00e9tection quantitative de fa\u00e7on \u00e0 ce que des mesures pr\u00e9ventives puissent \u00eatre prises si n\u00e9cessaire. La bact\u00e9rie <em>Listeria monocytogenes<\/em>, en particulier, est consid\u00e9r\u00e9e comme une cause majeure d\u2019intoxication alimentaire susceptible de provoquer la septic\u00e9mie, la m\u00e9ningite et l\u2019enc\u00e9phalite.<\/p>\n<\/div><div class=\"block-tabs__content  tab--5\"><p>La salmonelle, ou <em>Salmonella<\/em>, est class\u00e9e parmi les principales causes d\u2019intoxication alimentaire. L\u2019OMS estime qu\u2019\u00e0 l\u2019\u00e9chelle mondiale, elle est responsable de plus de 16\u00a0millions d\u2019infections par an, dont plus d\u2019un demi-million de cas mortels. La <em>salmonelle<\/em> se trouve dans les aliments crus tels que les \u0153ufs, la viande et le lait. Elle pr\u00e9sente un fort potentiel de risque dans les aliments consomm\u00e9s crus ou tr\u00e8s peu cuits (fromage au lait cru, saucisse crue, chocolat, cr\u00e8me glac\u00e9e, par exemple). Dans le secteur de l\u2019\u00e9levage intensif d\u2019aujourd\u2019hui, les contaminations par les <em>salmonelles<\/em> peuvent difficilement \u00eatre \u00e9vit\u00e9es. Gram-positives et immobiles, ces coques mesurent entre 0,8 et 1,2\u00a0\u03bcm. Commensal naturel de l\u2019homme, <em>S. aureus<\/em> vit sur la peau et dans les voies respiratoires sup\u00e9rieures mais ne provoque g\u00e9n\u00e9ralement pas de maladies. En cas d\u2019infection par des souches pathog\u00e8nes ou chez des individus immunod\u00e9prim\u00e9s, <em>S. aureus<\/em> peut provoquer des abc\u00e8s et des infections de la peau, mais aussi des maladies mortelles comme la pneumonie, la m\u00e9ningite, l\u2019endocardite, ou le syndrome du choc toxique (SCT).<\/p>\n<p>La pathog\u00e9nicit\u00e9 facultative de <em>S. aureus<\/em> est due \u00e0 sa capacit\u00e9 \u00e0 former des ent\u00e9rotoxines staphylococciques (SET) qui peuvent coloniser les aliments contamin\u00e9s mais ne peuvent pas \u00eatre compl\u00e8tement inactiv\u00e9es par la chaleur. La contamination des denr\u00e9es alimentaires par <em>S. aureus<\/em> est presque toujours due aux humains (mains, \u00e9ternuements, toux).<em> S. aureus<\/em> est donc consid\u00e9r\u00e9e comme un indicateur de mauvaise hygi\u00e8ne personnelle.<\/p>\n<p>En dehors de sa pertinence en mati\u00e8re d\u2019hygi\u00e8ne alimentaire, <em>S. aureus<\/em> joue \u00e9galement un r\u00f4le important dans l\u2019hygi\u00e8ne hospitali\u00e8re. Les souches de <em>S. aureus<\/em> devenues r\u00e9sistantes \u00e0 l\u2019action des antibiotiques d\u2019usage commun, dites \u00ab\u00a0<em>staphylocoque dor\u00e9<\/em> m\u00e9thicillinor\u00e9sistant\u00a0\u00bb (SDMR), peuvent notamment repr\u00e9senter un danger non \u00e9valuable car elles sont difficiles \u00e0 traiter.<\/p>\n<\/div>\n<\/div>\n<\/div><div class=\"block-tabs__content  tab--7\"><p>G\u00e9n\u00e9ralement inoffensive, la bact\u00e9rie <em>Escherichia coli<\/em> (ou <em>E. Coli<\/em> sous sa forme abr\u00e9g\u00e9e) est un composant naturel de la flore intestinale de l\u2019homme et des animaux. Il existe, cependant, des souches pathog\u00e8nes susceptibles de provoquer des infections graves. L\u2019une de ces souches pathog\u00e8nes est connue sous le nom d\u2019<em>Escherichia coli ent\u00e9roh\u00e9morragique<\/em> (\u00ab\u00a0EHEC\u00a0\u00bb). Produisant des substances toxiques telles que les v\u00e9rotoxines ou les shiga-toxines, ces bact\u00e9ries sont \u00e9galement appel\u00e9es \u00ab\u00a0VTEC\u00a0\u00bb (<em>Verotoxin-Producing E. Coli<\/em>) ou \u00ab\u00a0STEC\u00a0\u00bb (<em>Shiga-toxin-Producing E. coli<\/em>). Class\u00e9es parmi les maladies bact\u00e9riennes d\u2019origine alimentaire les plus courantes, les infections \u00e0 STEC\/VTEC peuvent m\u00eame entra\u00eener la mort. Les principales sources de contamination sont la viande crue et les produits laitiers non pasteuris\u00e9s.<\/p>\n<\/div><div class=\"block-tabs__content  tab--8\"><div id=\"text-block-13\" class=\"mk-text-block jupiter-donut- \">\n<p>Le groupe des <em>Vibrio spp.<\/em> englobe des micro-organismes pathog\u00e8nes pouvant provoquer des infections graves dues \u00e0 la consommation d\u2019aliments contamin\u00e9s. Parmi les maladies li\u00e9es aux fruits de mer, <em>Vibrio spp.<\/em> est l\u2019une des principales causes de gastro-ent\u00e9rite, d\u2019infection des plaies et de septic\u00e9mie.\u00a0De plus, <em>Vibrio spp.<\/em> est responsable de certaines infections graves potentiellement \u00e9pid\u00e9miques telles que le chol\u00e9ra.<\/p>\n<p>Naturellement pr\u00e9sente dans les eaux c\u00f4ti\u00e8res, la bact\u00e9rie <em>Vibrio parahaemolyticus<\/em> est observ\u00e9e en plus grande quantit\u00e9 en \u00e9t\u00e9. C\u2019est un organisme halophile ou d\u00e9pendant du sel. Par cons\u00e9quent, <em>Vibrio parahaemolyticus<\/em> se trouve dans les milieux marins, les fruits de mer et les mati\u00e8res f\u00e9cales des patients atteints d\u2019ent\u00e9rite aigu\u00eb.
