Elle touche pourtant pr\u00e8s de 1% de la population mondiale dont une majorit\u00e9 de femmes.<\/strong><\/p>\n<p>Les personnes concern\u00e9es sont incapables de d\u00e9composer correctement l\u2019histamine. L\u2019histamine exc\u00e9dentaire entra\u00eene divers sympt\u00f4mes dont des maux de t\u00eate, des \u00e9ruptions cutan\u00e9es, des diarrh\u00e9es ou des vomissements.<\/p>\n<p>Pour les personnes intol\u00e9rantes, la solution consiste \u00e0 \u00e9viter de consommer des aliments riches en histamine. Il s\u2019agit notamment des aliments brass\u00e9s ou ferment\u00e9s tels que le vin, le fromage, la bi\u00e8re, la choucroute, le vinaigre ou la sauce soja. D\u2019autres aliments peuvent aussi \u00eatre difficiles \u00e0 dig\u00e9rer pour les allergiques\u00a0; c\u2019est le cas des \u0153ufs, des produits carn\u00e9s, des levures, des champignons, des tomates ou des agrumes.<\/p>\n<p>En dehors de son potentiel allerg\u00e8ne, l\u2019histamine est \u00e9galement un indicateur du poisson avari\u00e9. La consommation de poisson contenant de grandes quantit\u00e9s d\u2019histamine est associ\u00e9e au scombrotoxisme ou intoxication histaminique. Le poisson frais de qualit\u00e9 contient moins de 10\u00a0ppm d\u2019histamine. Toutefois, si le poisson frais est expos\u00e9 \u00e0 des temp\u00e9ratures \u00e9lev\u00e9es, la croissance des micro-organismes normalement pr\u00e9sents dans les aliments riches en prot\u00e9ines, a tendance \u00e0 s\u2019acc\u00e9l\u00e9rer significativement. Ce qui entra\u00eene une d\u00e9gradation accrue de l\u2019histidine en histamine. Ainsi, en fonction des esp\u00e8ces de bact\u00e9ries, de la temp\u00e9rature et de la dur\u00e9e d\u2019exposition, les niveaux d\u2019histamine peuvent vite d\u00e9passer 1000\u00a0ppm.<\/p>\n<p>Au vu des \u00e9ventuels probl\u00e8mes de sant\u00e9 pouvant se produire suite \u00e0 la consommation d\u2019aliments pr\u00e9sentant une forte teneur en histamine, certains pays ont fix\u00e9 des valeurs limites. Pour les poissons et les produits d\u00e9riv\u00e9s, cette valeur limite a \u00e9t\u00e9 fix\u00e9e \u00e0 environ 100\u00a0mg\/kg dans de nombreux pays, et m\u00eame \u00e0 50\u00a0mg\/kg dans certains pays.
