La viande de cheval peut, par exemple, \u00eatre \u00e9tiquet\u00e9e comme du b\u0153uf. De telles fraudes alimentaires peuvent \u00eatre d\u00e9tect\u00e9es de mani\u00e8re hautement sp\u00e9cifique et quantifi\u00e9es relativement gr\u00e2ce \u00e0 la PCR en temps r\u00e9el (qui permet par exemple de d\u00e9terminer le pourcentage de chaque esp\u00e8ce animale par rapport \u00e0 la quantit\u00e9 totale de viande).<\/p>\n\n\n\n<p>L\u2019indication de l\u2019esp\u00e8ce animale a \u00e9galement toute son importance d\u2019un point de vue religieux (nourriture halal et kascher). Les inspections motiv\u00e9es par les croyances religieuses (pr\u00e9sence de porc dans les produits transform\u00e9s ou contenant de la viande) n\u2019admettent aucun seuil technique.
