Il est produit par des champignons du genre&nbsp;<em>Fusarium<\/em>. Le d\u00e9oxynival\u00e9nol est souvent pr\u00e9sent dans des produits v\u00e9g\u00e9taux tels que ceux des cultures c\u00e9r\u00e9ali\u00e8res comme le bl\u00e9, le ma\u00efs, l\u2019orge, l\u2019avoine et le seigle.<\/strong><\/p>\n\n\n\n<p>Plus de 150&nbsp;trichoth\u00e9c\u00e8nes sont aujourd\u2019hui connus, et les mycotoxines 3-ac\u00e9tyl et 15-ac\u00e9tyl-d\u00e9oxynival\u00e9nol sont les plus fr\u00e9quentes en Europe et en Am\u00e9rique du Nord. Dans le bl\u00e9, le ma\u00efs ou le riz, les concentrations trouv\u00e9es sont souvent de l\u2019ordre des ppm. Ces toxines pr\u00e9sentent un risque pour la sant\u00e9 humaine et animale en raison de leur forte cytotoxicit\u00e9 et de leur potentiel immunosuppresseur. Chez les animaux, la contamination des aliments par le DON entra\u00eene un refus d\u2019alimentation et des vomissements ou des diarrh\u00e9es entra\u00eenant un ralentissement de la croissance.
