Elle est souvent pr\u00e9sente avec l\u2019ochratoxine et se forme principalement lorsque les r\u00e9coltes sont stock\u00e9es dans de mauvaises conditions.<\/strong><\/p>\n\n\n\n<p>La citrinine peut \u00eatre pr\u00e9sente dans de nombreux grains tels que les haricots, les fruits, les olives, les herbes et les \u00e9pices. Elle est aussi souvent d\u00e9tect\u00e9e dans le riz rouge ferment\u00e9 avec des champignons de moisissure, qui est un produit utilis\u00e9 en Asie comme agent de conservation et comme colorant alimentaire. Le&nbsp;<em>Monascus purpureus<\/em>&nbsp;est un champignon utilis\u00e9 pour la fermentation du riz rouge en vue de fabriquer un compl\u00e9ment alimentaire (la levure de riz rouge).
