Ce contr\u00f4le est d\u2019autant plus crucial pour les produits \u00e0 haute valeur ajout\u00e9e tels que le caf\u00e9, o\u00f9 la pr\u00e9sence d\u2019 Ochratoxine A peut avoir un impact \u00e9conomique significatif et des cons\u00e9quences directes pour les producteurs.<\/p>\n\n\n\n<p>Une&nbsp;<a href=\"https:\/\/doi.org\/10.1016\/j.postharvbio.2023.112573\">\u00e9tude<\/a>&nbsp;r\u00e9cente publi\u00e9e par Rodr\u00edguez&nbsp;<em>et al.&nbsp;<\/em>dans la revue \u00ab&nbsp;Postharvest Biology&nbsp; and Technology&nbsp;\u00bb, a analys\u00e9 de mani\u00e8re approfondie la contamination en Ochratoxine A dans les caf\u00e9s Robusta de C\u00f4te d\u2019Ivoire trait\u00e9s diff\u00e9remment. Des variations dans la composition et l\u2019abondance des dix principales esp\u00e8ces fongiques ont \u00e9t\u00e9 observ\u00e9es entre les diff\u00e9rentes strat\u00e9gies de gestion post-r\u00e9colte. Notamment, diverses communaut\u00e9s fongiques ont \u00e9t\u00e9 trouv\u00e9es sur le caf\u00e9 s\u00e9ch\u00e9 par rapport aux grains fra\u00eechement r\u00e9colt\u00e9s.<\/p>\n\n\n\n<p>L\u2019\u00e9tude a mis en \u00e9vidence une corr\u00e9lation entre l\u2019augmentation des niveaux d\u2019Ochratoxine A et l\u2019abondance accrue du champignon ochratoxig\u00e8ne,&nbsp;<em>A. carbonarius<\/em>. Il est int\u00e9ressant de noter que les traitements de trempage ou la mise en tas n\u2019ont pas affect\u00e9 de mani\u00e8re significative l\u2019accumulation d\u2019Ochratoxine A, alors qu\u2019un le s\u00e9chage prolong\u00e9 en tas a favoris\u00e9 la production d\u2019OTA par ces champignons. L\u2019Ochratoxine A a \u00e9t\u00e9 d\u00e9tect\u00e9e dans tous les \u00e9chantillons, allant de 3,6 \u03bcg\/kg dans le caf\u00e9 fra\u00eechement r\u00e9colt\u00e9 \u00e0 760 \u03bcg\/kg dans le caf\u00e9 s\u00e9ch\u00e9, d\u00e9passant&nbsp;<a href=\"https:\/\/eur-lex.europa.eu\/legal-content\/EN\/TXT\/PDF\/?uri=CELEX:02006R1881-20230525\">la limite maximale de<\/a>&nbsp;3 \u03bcg\/kg de l\u2019UE pour le caf\u00e9 torr\u00e9fi\u00e9. Ces r\u00e9sultats soulignent l\u2019importance d\u2019une mesure pr\u00e9cise de l\u2019Ochratoxine A tout au long du traitement du caf\u00e9 et ce par des technologies telles que les colonnes d\u2019immuno-affinit\u00e9 permettant la concentration et la d\u00e9tection \u00e0 des niveaux bas de la toxine. Malgr\u00e9 la r\u00e9duction de l\u2019Ochratoxine A pendant la torr\u00e9faction, ces r\u00e9sultats posent des d\u00e9fis pour les exportations de caf\u00e9, soulignant la n\u00e9cessit\u00e9 de mesures strictes de contr\u00f4le r\u00e9gulier.
