Adulterazioni alimentari

Lo scandalo della carne di cavallo ha aumentato notevolmente la consapevolezza sui temi delle adulterazioni e delle frodi alimentari.

Le variazioni di prezzo e la disponibilità di prodotti alimentari di varia origine può portare a dichiarazioni errate sui componenti alimentari, sia da un punto di vista qualitativo che quantitativo. Per esempio, la carne di cavallo può essere etichettata come carne di manzo. Adulterazioni alimentari di questo genere possono essere rilevate con elevata specificità e quantificate mediante real-time PCR, ottenendo per esempio valori percentuali delle singole specie animali in relazione alla quantità totale di carne.

Inoltre, l’interesse per l’identificazione della specie animale nei prodotti a base di carne si fonda su motivazioni religiose (alimenti halal e kosher). L’identificazione a scopo religioso, specialmente in prodotti a base di carne di maiale o alimenti processati, non prevede alcun valore soglia. Ciò significa che sono necessari test puramente qualitativi e particolarmente sensibili, soprattutto per la rilevazione della carne di maiale. Il metodo di elezione è la real-time PCR. La sensibilità effettiva dei test real-time PCR si fonda sull’esistenza di DNA intatto, rendendo difficile una rilevazione efficace negli alimenti fortemente trasformati come la gelatina.

Tuttavia, non sono solo i prodotti a base di carne a subire adulterazioni. Le frodi alimentari sono diffusissime anche nei prodotti ittici e lattiero-caseari. Seleziona una delle seguenti categorie per scoprire di più sull’adulterazione degli alimenti.
