DON (vomitossina)
Il deossinivalenolo (DON o anche vomitossina) appartiene al gruppo dei tricoteceni ed è prodotto da funghi del genere Fusarium. Il deossinivalenolo è spesso presente nei vegetali, in particolare in cereali come frumento, mais, orzo, avena e segale.
Si conoscono più di 150 tricoteceni e le micotossine deossinivalenolo, 3-acetil- e 15-acetil-deossinivalenolo sono le più frequenti in Europa e in America del Nord. La concentrazione delle tossine del grano, del mais o del riso è spesso risibile (poche ppm). Per le loro elevate proprietà citotossiche e immunosoppressive queste tossine rappresentano un rischio per la salute umana e animale. Negli animali il mangime contaminato da DON può portare al rifiuto di alimentarsi, a vomito e diarrea, con rallentamento della crescita. Negli esseri umani l’intossicazione alimentare da DON ha causato dolori addominali, vertigini, cefalea, irritazioni della gola, nausea, vomito, diarrea e perdite di sangue con le feci. Il DON è un composto molto stabile durante lo stoccaggio, la macinazione, la lavorazione e la cottura degli alimenti e non si degrada alle alte temperature.
I livelli consigliati dalla FDA statunitense per il DON sono di 1 ppm per i prodotti finiti del frumento per il consumo umano e di 5 ppm per le granaglie e i loro sottoprodotti per i suini e altri animali.
