Cibi pronti
Per gli alimenti preparati e quelli pronti per il consumo (RTE) è richiesta l’analisi di svariati parametri al fine di ottenere prodotti alimentari sicuri e di alta qualità.
Il mercato dei cibi pronti è in crescita e un numero sempre maggiore di alimenti preparati, salse, merendine e zuppe pronte sono a disposizione del consumatore. I kit R-Biopharm possono essere impiegati lungo tutta la catena produttiva, dalle materie prime a quelle intermedie fino al prodotto finale, dal controllo delle merci in arrivo al monitoraggio dello stato d’igiene per arrivare all’analisi del prodotto ai fini di una corretta etichettatura. La nostra vasta gamma di test in formati diversi è utilizzata per analizzare anche matrici complesse quali minestre, salse, condimenti, prodotti da forno, miscele da forno, pizza, pasta, cereali, insaccati, pasticceria, cioccolato, gelati, merendine, margarina, miscele di spezie, cibi per l’infanzia e altri alimenti trasformati.
Monitoraggio dello stato d’igiene
I microorganismi possono causare malattie alimentari gravi. Il monitoraggio degli organismi patogeni e degli organismi inquinanti lungo tutta la catena produttiva è dunque importantissimo per garantire la tutela del consumatore e la stabilità del prodotto. I test microbiologici consentono il controllo dell’igiene delle superfici nell’ambiente produttivo e l’analisi dei prodotti alimentari preparati.
Allergeni
Gli allergeni costituiscono un rischio per i soggetti allergici anche se presenti in piccole quantità. Nonostante molti Paesi prevedano l’etichettatura degli ingredienti allergenici, la contaminazione involontaria per carryover è assai comune al momento dello stoccaggio come durante la produzione. I cibi pronti, per la loro lunga catena produttiva, presentano un elevato rischio di contaminazioni incrociate. I produttori dovrebbero quindi analizzare il contenuto di allergeni dei propri prodotti per assicurarne una corretta etichettatura ed evitare richiami di prodotto.
Adulterazioni alimentari
L’identificazione delle specie animali è una questione di grande interesse: i prodotti a base di carne possono essere contraffatti grazie a una errata dichiarazione degli ingredienti, come è successo con lo scandalo della carne di cavallo. Carne, pesce o latticini di minor qualità possono essere falsamente dichiarati, con frode a carico del consumatore; un’azione che può causare immensi danni economici e d’immagine al distributore. I test real-time PCR consentono di determinare la vera origine di un prodotto alimentare.
Micotossine
Cereali e altri prodotti agricoli sono spesso contaminati da micotossine come l’aflatossina, l’ocratossina o il DON. Nella produzione di alimenti preparati a base di cereali come la pizza o la pasta, le merci in entrata devono quindi essere accuratamente analizzate per individuare eventuali micotossine. Metodi di screening affidabili sono essenziali per i produttori, per la rispondenza alle normative e per garantire prodotti tossicologicamente sicuri.
Zuccheri, acidi e altri costituenti
Gli enzimi offrono metodi di quantificazione sensibili e specifici per molte sostanze presenti nei prodotti alimentari. Indicatori idonei della qualità del prodotto dei cibi pronti sono, tra gli altri, l’acido citrico (spesso usato come conservante), l’acido acetico, l’acido ascorbico, l’acido lattico, l’acido succinico, l’acido glutammico, il glucosio, il fruttosio, il saccarosio, il lattosio, il maltosio, il nitrato, l’etanolo e l’amido.
