Per misurare l\u2019esatta concentrazione di vitamine negli alimenti, R-Biopharm offre una vasta gamma di sistemi di prova.<\/strong><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Metodi analitici per la rilevazione delle vitamine<\/h3>\n\n\n\n<p>A seconda dell\u2019equipaggiamento disponibile (dispositivo per HPLC o fotometro per microtitoli), la rilevazione pu\u00f2 essere effettuata tramite metodi strumentali (HPLC, LC-MS\/MS), in combinazione con colonne di immunoaffinit\u00e0 (EASI-EXTRACT\u00ae) per la purificazione preliminare e la concentrazione dei campioni. A seconda del tipo di preparazione \u00e8 possibile decidere se rilevare la concentrazione di vitamine aggiunte o quella totale. Queste colonne sono disponibili per l\u2019acido folico, la vitamina B12 e la biotina.<\/p>\n<\/div><div class=\"block-tabs__content  tab-vitaminblock1-3\"><p>I kit ELISA della linea RIDASCREEN\u00ae consentono l\u2019analisi quantitativa delle singole vitamine aggiunte (acido folico, vitamina B12 e biotina) tramite una reazione antigene-anticorpo e un\u2019interpretazione mediante un lettore di micropiastre e il software RIDASOFT\u00ae Win.NET<\/p>\n<\/div><\/div><\/div>\n\n\n<h3 class=\"wp-block-heading\">Norme sull\u2019utilizzo di vitamine negli alimenti<\/h3>\n\n\n\n<p>Per garantire al grande pubblico un apporto costante di vitamine \u00e8 ormai pratica comune rinforzare alimenti, mangimi e prodotti farmaceutici con vitamine di vario tipo, solitamente mediante l\u2019uso di cosiddette premiscele da miscelare o spruzzare sui prodotti. I sistemi analitici servono a controllare che il contenuto vitaminico di detti prodotti corrisponda a quello dichiarato in confezione e che ottemperi alle direttive vigenti. La disponibilit\u00e0 di sistemi per l\u2019analisi delle vitamine in grado di assicurare risultati accurati risulta quindi indispensabile.<\/p>\n\n\n\n<p>Il 22 novembre 2011 \u00e8 stato pubblicato nella gazzetta ufficiale UE il regolamento 1169\/2011 del Parlamento Europeo relativo alla fornitura di informazioni sugli alimenti, che include l\u2019obbligo di informare i consumatori della presenza di determinati ingredienti negli alimenti. Il contenuto di vitamine in alimenti, mangimi e prodotti farmaceutici deve corrispondere a quello indicato sull\u2019etichetta fino al termine minimo di conservazione.<\/p>\n\n\n\n<p>Secondo le raccomandazioni della Societ\u00e0 Chimica Tedesca (GDCh), vi \u00e8 tolleranza per le vitamine del gruppo 3 (vitamina A, D, E, acido folico, vitamina B12 e biotina) fino al 30% del contenuto totale del prodotto riportato in etichetta, mentre per le vitamine del gruppo 2 (vitamine B1, B2, B6, acido pantotenico, niacina e vitamina C) la tolleranza arriva al 20%.<\/p>\n\n\n\n<p>\u00c8 necessario quindi che produttori e autorit\u00e0 di vigilanza controllino le concentrazioni di vitamine nei prodotti finiti.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Informazioni di base sulle vitamine<\/h3>\n\n\n\n<p>Le vitamine rafforzano il sistema immunitario, permettono al corpo di utilizzare altre sostanze nutritive, si completano come enzimi, disintossicano l\u2019organismo e riducono il rischio di infarto cardiaco. Sono essenziali per la produzione di energia e influenzano le reazioni del metabolismo senza modificarsi. Anche un basso contenuto di vitamine pu\u00f2 avere un effetto notevole. Tuttavia, in alcune circostanze pu\u00f2 verificarsi una carenza vitaminica.<\/p>\n\n\n\n<p>Le vitamine sono presenti in alimenti e prodotti alimentari di origine vegetale e animale, e sono divise in due gruppi fondamentali: vitamine liposolubili e vitamine idrosolubili. Le vitamine liposolubili sono trattenute nel corpo e ci\u00f2 pu\u00f2 portare, nel caso pi\u00f9 favorevole, alla formazione di una riserva vitaminica che rende superfluo un apporto costante. Tale condizione pu\u00f2 per\u00f2 causare problemi di salute. Le vitamine idrosolubili, invece, non vengono immagazzinate nell\u2019organismo, che le elimina subito dopo il consumo. Di conseguenza \u00e8 necessaria una regolare assunzione di queste vitamine. Solo la vitamina B12 pu\u00f2 essere trattenuta nel fegato.<\/p>\n\n\n\n<p>In totale esistono 13 vitamine, quattro delle quali, A, D, E e K, sono liposolubili; le vitamine del gruppo B e la vitamina C sono invece idrosolubili. Poich\u00e9 il nostro corpo non \u00e8 in grado di sintetizzare la maggior parte di questi composti organici essenziali, \u00e8 fondamentale assumerli per vie endogene. La vitamina D \u00e8 invece un\u2019eccezione, dal momento che il corpo \u00e8 in grado di produrla grazie all\u2019irraggiamento solare della cute. Non \u00e8 prodotta dal corpo umano e deve essere introdotta con la dieta. La vitamina B12 \u00e8 necessaria solo in piccole concentrazioni, tuttavia \u00e8 fondamentale per il sistema nervoso, ha effetti protettivi per il cuore e svolge un ruolo importante nella biosintesi dei nucleotidi, nell\u2019assunzione di ferro e nel metabolismo degli amminoacidi. Una mancanza di vitamina B12 pu\u00f2 portare ad anemia e deficit neurologici.<\/p>\n<\/div><div class=\"block-tabs__content  tab-vitaminblock2-2\"><p>La biotina, nota anche come vitamina B7 o vitamina H, \u00e8 un fattore nutritivo fondamentale e un importante additivo alimentare, presente naturalmente nei prodotti lattiero-caseari, nelle uova, nei fiocchi d\u2019avena e nella frutta a guscio. Riveste un ruolo di primo piano nel metabolismo umano e animale. La biotina agisce da coenzima intervenendo nei processi di gluconeogenesi, di biosintesi degli acidi grassi e nel metabolismo degli amminoacidi. La carenza di biotina nei mammiferi determina inibizione della crescita, perdita di appetito e ridotto utilizzo dei componenti alimentari dovuto a modifiche nella flora intestinale. Stadi avanzati di avitaminosi si manifestano con perdita dei capelli, dermatite e segni di paralisi. La richiesta di biotina negli adulti \u00e8 di 30-60 \u03bcg al giorno.<\/p>\n<\/div><div class=\"block-tabs__content  tab-vitaminblock2-3\"><p>L\u2019acido folico, precedentemente noto come vitamina B9 oppure B11, appartiene al gruppo delle vitamine idrosolubili. Non \u00e8 prodotto dal corpo umano ma deve essere introdotto con la dieta; sono importanti fonti di acido folico gli ortaggi a foglia, i lieviti e i prodotti a base di cereali integrali e germe di grano. L\u2019acido folico svolge un ruolo molto importante in tutti i processi di crescita e divisione cellulare. Un\u2018 assunzione adeguata di acido folico durante la gravidanza \u00e8 importante per evitare, ad esempio, difetti del tubo neurale. Alcuni Paesi hanno deciso di fortificare pane, cereali, farina, pasta, riso o altri prodotti a base di cereali con acido folico in diverse concentrazioni come approccio preventivo, al fine di incrementare l\u2018assunzione di micronutrienti da parte della popolazione.<\/p>\n<\/div><div class=\"block-tabs__content  tab-vitaminblock2-4\"><p>La niacina, nota anche come vitamina B3, appartiene al gruppo delle vitamine idrosolubili. Il corpo umano \u00e8 in grado di produrne quantit\u00e0 limitate a partire dall\u2019amminoacido triptofano, ma buona parte dell\u2019apporto necessario deve essere introdotto con la dieta. La niacina \u00e8 presente principalmente in pesce, pollame, funghi e prodotti lattiero-caseari, e svolge un ruolo importante nel metabolismo dei carboidrati, dei grassi e delle proteine. Una carenza di niacina pu\u00f2 indurre cambiamenti a livello epiteliale e infiammazioni delle mucose orali e gastrointestinali.<\/p>\n<\/div><div class=\"block-tabs__content  tab-vitaminblock2-5\"><p>L\u2019acido pantotenico, noto anche come vitamina B5, appartiene al gruppo delle vitamine idrosolubili. Non \u00e8 prodotto dal corpo umano ma deve essere introdotto con la dieta; \u00e8 presente principalmente in cibi come fegato e reni, prodotti a base di cereali integrali, frutta, ortaggi, latte e pesce. La vitamina B5 svolge un ruolo importante nella decomposizione del coenzima A e nella creazione di carboidrati e grassi. Una carenza di acido pantotenico pu\u00f2 causare stanchezza, depressione e deficit del sistema immunitario.<\/p>\n<\/div><div class=\"block-tabs__content  tab-vitaminblock2-6\"><p>L\u2019acido L-ascorbico, noto anche come vitamina C, viene utilizzato dall\u2019industria alimentare per le sue propriet\u00e0 di vitamina e per l\u2019effetto antiossidante e conservante. Una carenza di vitamina C pu\u00f2 causare l\u2019insorgere di scorbuto negli esseri umani. Poich\u00e9 negli alimenti la vitamina C viene convertita in acido L-deidroascorbico, una sostanza biologicamente attiva, i sistemi analitici devono essere in grado di rilevarle entrambe. Il test VitaFast\u00ae Vitamin C (L-ascorbic acid) (Art. P1010) \u00e8 in grado di rilevare la presenza di vitamina C negli alimenti. Si tratta di un test enzimatico su piastre per microtitolazione di facile utilizzo per l\u2019analisi quantitativa della vitamina C (acido L-ascorbico) in alimenti, prodotti farmaceutici e altri materiali; pu\u00f2 essere inoltre utilizzato per l\u2019analisi per livello generale di vitamina C (acido L-ascorbico + acido L-deidroascorbico).<\/p>\n<\/div><div class=\"block-tabs__content  tab-vitaminblock2-7\"><p>L\u2019inositolo \u00e8 presente in alimenti, mangimi e prodotti farmaceutici di ogni tipo. In passato veniva inserito nel gruppo delle vitamine B (come vitamina B8). Nel metabolismo, l\u2019inositolo svolge un importante ruolo nella trasmissione di segnali. Non \u00e8 un componente essenziale ma pu\u00f2 essere prodotto a partire dal glucosio; \u00e8 considerato simile alle vitamine pur non facendone parte. L\u2019inositolo \u00e8 un poliolo carbociclico e ne sono noti nove isomeri, identificati dalla stessa formula C6H12O6. Il pi\u00f9 comune di questi isomeri \u00e8 il myo-inositolo. L\u2019aggiunta di inositolo negli alimenti \u00e8 parzialmente disciplinata per legge: il limite massimo nelle bevande energetiche \u00e8 di 200mg\/l (\u00a7 4 par. 2 FrSaftErfrischGtrV [Direttiva succhi di frutta e bibite]).
