Un buon esempio \u00e8 la miscelazione del latte vaccino, molto pi\u00f9 economico, in prodotti qualitativamente superiori a base di latte di pecora o di capra.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">CIS \u2013 Caseina<\/h3>\n\n\n\n<p>La popolarit\u00e0 dei formaggi di latte caprino e pecorino \u00e8 cresciuta notevolmente negli ultimi anni, e con essa la loro diffusione. Poich\u00e9 la produzione di questi due tipi di latte \u00e8 prettamente stagionale, \u00e8 pratica comune aggiungere latte vaccino a tali prodotti. La Direttiva UA 273\/2008 fissa allo 0,5% il limite massimo di latte vaccino. La miscelazione di additivi \u00e8 strettamente regolamentata a livello nazionale e internazionale e richiede quindi controlli rigorosi.<\/p>\n\n\n\n<p>La nostra gamma di prodotti comprende numerosi test per l\u2019identificazione del latte vaccino nei prodotti a base di latte pecorino e caprino. Questo permette di escludere la presenza di additivi adulteranti nei prodotti di alta qualit\u00e0. Al momento, l\u2019unico metodo di riferimento per il rilevamento della caseina vaccina nei formaggi di pecora o capra \u00e8 la focalizzazione isoelettrica per l\u2019identificazione di \u03b3-caseina. Oltre a questa complessa analisi, eseguibile solo nei laboratori meglio attrezzati, sono disponibili le tecniche immunocromatografici.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Melammina<\/h3>\n\n\n\n<p>Nel 2008 si \u00e8 parlato molto dello scandalo del latte in Cina; causa dello stesso \u00e8 stata la pratica di diluire il latte con acqua per ridurne il costo. Affinch\u00e9 il latte risultasse comunque ad alto contenuto di proteine si era ricorso all\u2019aggiunta di melammina, una sostanza ricca d\u2019azoto. I prodotti cos\u00ec adulterati venivano utilizzati per la produzione di cibi per neonati (latte in polvere). Migliaia di bambini hanno sofferto gravemente a causa di queste contraffazioni. Nei neonati, infatti, l\u2019apporto di melammina pu\u00f2 portare alla formazione di calcoli e a gravi disfunzioni renali.
