L\u2019allergia alla senape \u00e8 diffusa in Paesi come la Francia e la Spagna, ma anche in India.<\/strong><\/p>\n\n\n\n<p>I semi di senape sono costituiti per pi\u00f9 del 20% da proteine, alcune delle quali hanno un effetto allergenico. I soggetti sensibili possono avere reazioni allergiche anche a piccole quantit\u00e0 di allergeni negli alimenti. Tra i sintomi si contano eruzioni cutanee, gonfiore, mancanza di respiro, asma, dolori di stomaco, nausea e vomito, fino allo shock anafilattico. I soggetti allergici devono assolutamente evitare qualsiasi cibo contenente senape. La senape \u00e8 un condimento molto usato e pu\u00f2 essere contenuta in molti cibi diversi, come la maionese, le salse, i condimenti per l\u2019insalata, il ketchup, le marinate, i sottaceti, gli insaccati e i prodotti della carne. L\u2019uso della senape \u00e8 molto diffuso nella cucina francese, italiana e russa; i semi e l\u2019olio di senape sono spesso utilizzati nella cucina indiana. Alcune persone con allergia alla senape non presentano sensibilit\u00e0 incrociata con altri alimenti come la frutta o la frutta a guscio.<\/p>\n\n\n\n<p>A causa delle significative carenze nell\u2019etichettatura e nelle garanzie di qualit\u00e0, le analisi degli alimenti spesso rilevano tracce non dichiarate di questo allergene. Le contaminazioni incrociate sono una fonte importante di pericolo durante la lavorazione (per la formazione di polveri durante la triturazione) e il confezionamento.
