Ne esistono quasi 300 tipi, presenti principalmente in tre aree: Mediterraneo, America settentrionale e Ande. Solo quattro di queste specie vengono coltivate per l\u2019utilizzo nell\u2019industria alimentare (L. albus, luteus, angustifolium e mutabilis) a causa del loro basso contenuto di alcaloidi. L\u2019alto contenuto di proteine (35-42%) li rende sempre pi\u00f9 diffusi come additivi alimentari in merendine, pasta, pane, biscotti, caff\u00e8 e alimenti istantanei per vegetariani; esibiscono infatti caratteristiche di stabilizzazione della consistenza e ottimizzazione dei costi paragonabili a quelle della soia.<\/p>\n\n\n\n<p>I lupini sono un ingrediente estremamente versatile: sono infatti una valida fonte di proteine e un\u2019alternativa alla soia e alla carne in alimenti e mangimi per animali. Poich\u00e9 sono in grado di legare l\u2019acqua negli alimenti, vengono utilizzati in sostituzione delle uova nella produzione di pane e prodotti da forno. Il loro utilizzo aumenta la freschezza e la stabilit\u00e0 dei prodotti. Molti alimenti dietetici utilizzano la farina di lupini anzich\u00e9 quella di grano, segale od orzo.<\/p>\n\n\n\n<p>Parallelamente al loro sempre maggiore utilizzo, a partire dall\u2019anno 2000 \u00e8 stato registrato un aumento delle reazioni allergiche IgE-mediate, oltre a casi di reazioni incrociate in soggetti allergici alle arachidi. Considerata la possibilit\u00e0 di reazioni allergiche gravi, la presenza di lupini deve essere sempre indicata sulle confezioni degli alimenti. L\u2019allergene pu\u00f2 essere presente come ingrediente primario o come risultato di contaminazione nei prodotti crudi o cotti.<\/p>\n\n\n\n<p>Nel 2007 i lupini sono entrati a far parte della lista degli otto allergeni principali indicati dalle leggi europee (2007\/68\/EC, allegato IIIa).
