L\u2019aumento dei casi di enterite da <em>Campylobacter<\/em> \u00e8 reso ancora pi\u00f9 rapido dalla diffusione del batterio in numerose specie di animali selvatici, da allevamento e da compagnia (uccelli e mammiferi). Essendo parte della flora batterica del pollame, <em>Campylobacter<\/em> trova facilmente modo di entrare a contatto con gli esseri umani. Altre forme di trasmissione per questo patogeno sono il latte, la carne trita e l\u2019acqua. <em>Campylobacter<\/em> viene rilasciato in grandi quantit\u00e0 nell\u2019ambiente da portatori di ogni genere ed entra a contatto con il corpo umano tramite cibi contaminati. La dose infettiva per l\u2019enterite da <em>Campylobacter<\/em> \u00e8 relativamente bassa; per scatenare un\u2019infezione sono richiesti infatti meno di 500 batteri. Delle 15 specie note di <em>Campylobacter<\/em>, le due maggiormente responsabili di gastroenteriti negli esseri umani sono <em>C. jejuni<\/em>e <em>C. coli<\/em>.<\/p>\n<\/div><div class=\"block-tabs__content  tab--2\"><p>Il genere <em>Clostridium<\/em> \u00e8 composto da batteri sporigeni gram-positivi, diffusi pressoch\u00e9 dappertutto nell\u2019ambiente. <em>Clostridium botulinum<\/em>, <em>Clostridium perfringens<\/em> e <em>Clostridium estertheticum<\/em> sono patogeni di grande importanza. La contaminazione, causa a sua volta di gravi malattie, pu\u00f2 avvenire se il cibo non viene raffreddato a sufficienza. Questi batteri sono termoresistenti e possono quindi sopravvivere anche negli alimenti riscaldati.<\/p>\n<\/div><div class=\"block-tabs__content  tab--3\"><p><em>Legionella<\/em> \u00e8 un genere di batteri gram-negativi a bastoncino presenti negli ambienti acquatici e considerati dei potenziali patogeni. La specie maggiormente responsabile di malattie negli esseri umani \u00e8 <em>Legionella pneumophila<\/em>, causa della malattia nota come legionellosi. Questa malattia si trasmette principalmente tramite il consumo di acqua contaminata.<\/p>\n<\/div><div class=\"block-tabs__content  tab--4\"><p>I batteri del genere <em>Listeria<\/em> sono presenti pressoch\u00e9 dappertutto in natura. \u00c8 possibile calcolare il rischio di contaminazione grazie a tecniche di rilevazione quantitativa. In particolare, <em>Listeria monocytogenes<\/em> \u00e8 considerato una delle cause pi\u00f9 comuni di intossicazioni alimentari e pu\u00f2 provocare setticemia, meningite ed encefalite.<\/p>\n<\/div><div class=\"block-tabs__content  tab--5\"><p>Il genere <em>Salmonella<\/em> \u00e8 considerato tra le cause principali di intossicazioni alimentari al mondo. L\u2019OMS calcola che si verifichino oltre 16 milioni di infezioni all\u2019anno, pi\u00f9 di mezzo milione delle quali fatali. <em>Salmonella<\/em> \u00e8 presente principalmente nei cibi crudi quali uova, carne e latte. Il potenziale di rischio \u00e8 molto elevato, soprattutto negli alimenti che non richiedono di essere riscaldati (per es. formaggio di latte crudo, insaccati crudi, cioccolato e gelato). Negli allevamenti industriali moderni la contaminazione da <em>Salmonella<\/em>risulta pressoch\u00e9 inevitabile; \u00e8 quindi fondamentale garantire un controllo di qualit\u00e0 efficace mediante test affidabili. A questo scopo offriamo una vasta gamma di test per il controllo delle condizioni igieniche delle superfici e degli alimenti.<\/p>\n<\/div><div class=\"block-tabs__content  tab--6\"><div class=\"mk-accordion-pane\">\n<div id=\"text-block-11\" class=\"mk-text-block jupiter-donut- \">\n<p>Al microscopio, <em>Staphylococcus aureus<\/em> si presenta come un grappolo di batteri immobili di forma sferica, dal diametro compreso tra 0,8 e 1,2 \u00b5m e gram-positivi. <em>S. aureus<\/em> \u00e8 un commensale degli esseri umani, presente principalmente sulla pelle e nelle vie respiratorie superiori, normalmente non portatore di malattie. Nei soggetti immunocompromessi o nel caso di infezioni da parte di ceppi patogeni, <em>S. aureus<\/em> pu\u00f2 causare infezioni cutanee, ascessi e perfino malattie potenzialmente letali come polmonite, meningite, endocardite e sindrome da shock tossico (TSS).<\/p>\n<p>Una delle ragioni della patogenicit\u00e0 di <em>S. aureus<\/em> risiede nella sua capacit\u00e0 di produrre enterotossine (SET), che si accumulano negli alimenti contaminati e non vengono disattivate completamente dal calore. Le contaminazioni da <em>S. aureus<\/em> negli alimenti sono causate quasi unicamente dall\u2019interazione umana (mani, starnuti e colpi di tosse). <em>S. aureus<\/em> \u00e8 quindi considerato indicatore di cattiva igiene personale.<\/p>\n<p><em>S. aureus<\/em> \u00e8 di grande rilevanza anche per l\u2019igiene delle strutture ospedaliere, in particolare quei ceppi che hanno sviluppato resistenza agli antibiotici comuni (cosiddetti \u201c<em>Staphylococcus aureus<\/em> resistenti alla meticillina\u201d, o MRSA) costituiscono un rischio di entit\u00e0 difficilmente valutabile, in quanto resistenti ai trattamenti pi\u00f9 diffusi.<\/p>\n<\/div>\n<\/div>\n<\/div><div class=\"block-tabs__content  tab--7\"><p>I batteri <em>Escherichia coli<\/em> (abbreviato solitamente in <em>E. coli<\/em>) fanno parte della flora intestinale umana e animale e sono solitamente innocui. Ne esistono per\u00f2 ceppi patogeni in grado di causare infezioni anche gravi. Uno di questi ceppi \u00e8 noto come <em>Escherichia coli<\/em> enteroemorragica (EHEC). I ceppi patogeni prendono il nome dalle sostanze tossiche che producono: verotossina (VTEC) e tossina di Shiga (STEC). Le infezioni da STEC e VTEC sono tra le malattie di origine alimentare pi\u00f9 diffuse e possono risultare anche fatali. Le fonti pi\u00f9 comuni di contaminazione sono le carne crude e i prodotti lattiero-caseari non pastorizzati.<\/p>\n<\/div><div class=\"block-tabs__content  tab--8\"><p>I vibrioni sono un genere di microorganismi patogeni che contaminano il cibo e possono causare infezioni anche gravi. I vibrioni presenti nei prodotti ittici sono una delle cause pi\u00f9 diffuse di gastroenteriti, infezioni e setticemie.
