Si trova spesso insieme all\u2019ocratossina e si forma principalmente per cattive condizioni di conservazione dopo la raccolta.<\/strong><\/p>\n\n\n\n<p>La citrinina pu\u00f2 svilupparsi in vari vegetali come fagioli, frutta, olive, erbe aromatiche e spezie. Spesso si rileva nel riso rosso che \u00e8 stato fermentato con muffe fungine, impiegato nei Paesi asiatici come conservante e colorante alimentare. Il fungo&nbsp;<em>Monascus purpureus<\/em>&nbsp;\u00e8 usato per la fermentazione del riso rosso nella fabbricazione di un integratore alimentare (lievito di riso rosso in polvere) che, per i suoi effetti benefici sulla salute, sta acquistando sempre pi\u00f9 importanza. Tuttavia, questo prodotto pu\u00f2 essere contaminato con citrinina.<\/p>\n\n\n\n<p>Il Regolamento UE n. 212\/2014 della Commissione fissa un contenuto massimo di 2000 \u03bcg\/kg (ppb) di citrinina negli integratori alimentari a base di riso, fermentati con il lievito rosso Monascus purpureus. Tale valore limite \u00e8 stato aggiornato nel gennaio 2016.
