Bacteriële toxines
Sommige soorten bacteriën produceren toxines. Inname van voedsel dat besmet is met die bacteriële toxines kan ernstige gevallen van voedselvergiftiging veroorzaken.
De bacteriesoorten Staphylococcus aureus, Staphylococcus hyicus en ook Staphylococcus intermedius produceren een of meer hittebestendige eiwitten die zich gedragen als enterotoxines (SET). SET’s zijn de voornaamste oorzaken van voedselvergiftiging naast salmonellose en Campylobacteriose. In het algemeen wordt aangenomen dat een populatie van 5 x 10⁵ cellen van enterotoxine-producerende S. aureus-stammen per gram voeding vereist is om een intoxicatie te veroorzaken. Maar in andere studies werd aangetoond dat slechts 100–200 ng van Staphylococcus-enterotoxines kan leiden tot symptomen van voedselvergiftiging.
SET-intoxicaties zijn vaak in verband gebracht met pasta, voltooide vleesproducten, ham, pasteien, kippenvleesproducten, vis, visproducten, melk, melkproducten, ijs, eierproducten, salades, gebak en taartvullingen, en met klaargemaakte voeding van deze voedingsmiddelen. De enterotoxines van de serologische groepen A, B, C, D, en E zijn van groot belang.
Een andere bacteriesoort die toxines kan produceren is de enterohemorragische Escherichia coli (EHEC). Deze bacteriën maken de toxische stoffen verotoxine of shiga-toxine en staan daarom ook bekend als verotoxine-producerende E. coli (VTEC) of shiga-toxineproducerende E. coli (STEC). Infecties met STEC/VTEC worden gerangschikt onder de meest voorkomende voedingsgerelateerde bacteriële ziekten die zelfs tot de dood kunnen leiden. Bronnen van besmetting zijn hoofdzakelijk rauw vlees en ongepasteuriseerde zuivelproducten.
