Vomitoxine (DON)

Deoxynivalenol (DON, ook bekend als vomitoxine) behoort tot de trichothecenengroep van mycotoxines en wordt gevormd door schimmels van het geslacht Fusarium. Deoxynivalenol komt vaak in veel plantenproducten voor, in het bijzonder in graanoogsten zoals tarwe, mais, gerst, haver en rogge.

Er zijn meer dan 150 trichothecenen bekend en de mycotoxines deoxynivalenol, 3-acetyl- en 15-acetyl-deoxynivalenol zijn de meest voorkomende toxines in Europa en Noord-Amerika. De toxineconcentraties die aangetroffen worden in tarwe, mais of rijst liggen vaak in het ppm-bereik. Vanwege hun forse cytotoxische en immunosuppressieve eigenschappen vormen deze toxines een gezondheidsrisico voor mens en dier. Bij dieren heeft met DON besmet voeder geleid tot voederweigering, braken of diarree, wat resulteerde in verminderde groei. Bij mensen heeft voedselvergiftiging met DON geleid tot buikpijn, duizeligheid, hoofdpijn, een geïrriteerde keel, misselijkheid, braken, diarree en fecaal bloedverlies. DON is een zeer stabiele verbinding tijdens opslag, malen, verwerken en koken van voedingsmiddelen en wordt bij hoge temperaturen niet afgebroken.

VS De FDA adviseert een DON-limiet van 1 ppm voor voltooide tarweproducten voor menselijke consumptie en 5 ppm voor graan en bijproducten van graan voor varkens en andere dieren.
