Voedsel-allergenen
Voor het grootste deel van de bevolking is de consumptie van voeding ongevaarlijk. Maar bij mensen met voedselallergieën kan voeding levensbedreigende reacties veroorzaken en de kwaliteit van leven aanzienlijk beperken.
Wetenschappers schatten dat ongeveer 2–4% van de volwassenen en 6–8% van de kinderen lijden aan voedselallergieën en dat veel mensen een voedingsintolerantie hebben. De prevalentie van voedingsintolerantie is moeilijk te schatten omdat medisch-wetenschappelijke onderzoeken daarover ontbreken. Anders dan voedingsintoleranties kunnen echte voedselallergieën zeer gevaarlijk zijn, omdat ze worden veroorzaakt door verkeerde immuunreacties. Deze reacties worden gewoonlijk uitgelokt door eiwitten; allergische personen zijn al gesensibiliseerd voor deze eiwitten.
De etikettering van deze allergene eiwitten, die allergenen worden genoemd, is van groot belang voor allergische personen. In deze context zijn verborgen allergenen gevaarlijk door hun aanwezigheid, bijvoorbeeld in gemaksvoeding of als onbedoelde verontreiniging van voeding tijdens opslag en productie.
Voedings-etiketteringsverordening
Om allergische personen te beschermen tegen ongewenste consumptie van allergenen, is de voedings-etiketteringsverordening van de EU aangenomen. Deze EU-verordening wordt voortdurend bijgewerkt en herzien (EU-verordening 1169/2011 werd van kracht in december 2014). Sinds november 2005 zijn voedingproducenten verplicht om ingrediënten te etiketteren die allergieën of intoleranties kunnen veroorzaken. Hiertoe behoren de volgende voedingsstoffen, en de voedingsmiddelen die ervan worden gemaakt:
Verder moeten zwaveldioxide en sulfieten in een concentratie van meer dan 10 milligram per kilogram worden geëtiketteerd. Andere landen hebben ook etiketteringsregelgeving, aangepast aan de landspecifieke allergenen, bijvoorbeeld betreffende Histamine.
Allergenenanalyse
In de meeste productielijnen wordt meer dan één product geproduceerd, wat kan leiden tot onbedoelde verontreiniging met allergenen. Om consumenten te beschermen en een adequate etikettering te waarborgen, dient een betrouwbare allergenenanalyse te worden toegepast. Voor dit doel biedt R-Biopharm immunochemische en ook moleculair biologische technieken aan.
