Bereide voedingsmiddelen
Bereide voedingsmiddelen en RTE-voedingsmiddelen (Ready-To-Eat) moeten op veel verschillende parameters worden getest om veilige voedingsmiddelen van hoge kwaliteit te verkrijgen.
De markt voor gemaksvoeding groeit, en steeds meer bereide voeding, sauzen, snacks en instantsoepen vinden hun weg naar de consument. R-Biopharm testkits kunnen gedurende de hele productieketen worden toegepast: van grondstoffen tot tussenproducten en eindproducten, van de inspectie van binnenkomende goederen tot monitoring van de hygiëne en uiteindelijk tot de productanalyse voor de juiste etikettering. Ons uitgebreide portfolio van verschillende testformats kan worden gebruikt voor de analyse van zelfs complexe matrices, zoals soepen, sauzen, dressings, bakkerijproducten, bakmengsels, pizza, pasta, granen, worst, banketwaren, chocolade, ijs, snacks, margarine, kruidenmengsels, babyvoeding en andere bewerkte voedingsmiddelen.
Hygiënemonitoring
Micro-organismen kunnen ernstige door voeding overgedragen ziekten veroorzaken. De monitoring van pathogenen en bederforganismen in de gehele productieketen is daarom cruciaal om de bescherming van de consument en de stabiliteit van het product te waarborgen. Door middel van microbiologische testen kan de hygiëne van oppervlakken in de productieomgeving gecontroleerd worden, en is ook analyse van bereide voedingsmiddelen mogelijk.
Allergenen
Zelfs kleine hoeveelheden allergenen vormen een risico voor allergische personen. Hoewel etikettering van allergene ingrediënten in de meeste landen verplicht is, komt onbedoelde besmetting tijdens opslag en productie veel voor door overbrenging. Door de lange productieketen lopen bereide voedingsmiddelen een groot risico van kruisbesmetting. Fabrikanten moeten hun producten daarom testen op het allergeengehalte om correcte etikettering te waarborgen en terugroeping van producten te vermijden.
Voedselfraude
Specificatie van diersoorten is van groot belang: met vleesproducten is fraude mogelijke middels onjuiste etikettering – zie bijvoorbeeld het paardenvleesschandaal. Vlees, vis of zuivelproducten van mindere kwaliteit kunnen valselijk worden aangegeven en dus wordt de consument misleid. Dit hoeft niet per se met criminele bedoelingen te gebeuren, maar de financiële gevolgen en het reputatieverlies kunnen voor de distributeur reusachtig zijn. Real-time PCR-testen maken het mogelijk de werkelijke herkomst van een voedingsproduct te bepalen.
Mycotoxines
Granen en andere landbouwproducten zijn vaak besmet met mycotoxines zoals aflatoxine, ochratoxine of DON. Wanneer voedingsmiddelen op basis van granen worden bereid, bijvoorbeeld pizza of pasta, moeten de binnenkomende goederen daarom grondig worden getest op mycotoxines. Betrouwbare screeningmethoden zijn voor fabrikanten van essentieel belang om te voldoen aan de regelgeving en om de toxicologisch veiligheid van producten te waarborgen.
Suikers, zuren, en andere bestanddelen
Enzymen bieden gevoelige en specifieke kwantificeringsmethoden voor veel stoffen die in voedingsmiddelen aanwezig zijn. Relevante indicatoren voor de productkwaliteit van bereide voedingsmiddelen omvatten citroenzuur (dat vaak als conserveermiddel wordt gebruikt), azijnzuur, ascorbinezuur, melkzuur, barnsteenzuur, glutaminezuur, glucose, fructose, sucrose, lactose, maltose, nitraat, ethanol en zetmeel.
