Er worden bijna 300 lupine-soorten aangetroffen in 3 gebieden (het Middellandse Zeegebied, Noord-Amerika en de Andes). Slechts 4 lupine-stammen zijn gecultiveerd (zoete lupines) voor gebruik in voeding en diervoeder (L. albus, luteus, angustifolius en mutabilis) vanwege hun lage alkalo\u00efdegehalte. Op basis van hun hoge eiwitgehalte van 35%\u201342 % worden lupines steeds meer gebruikt als voedingsadditieven in snacks, pasta, brood, koekjes, koffie en sommige vegetarische instantmaaltijden voor stabilisatie van de textuur en voor optimalisatie van de receptkosten in vergelijking met soja.<\/p>\n\n\n\n<p>Lupines zijn zeer veelzijdige ingredi\u00ebnten: ze worden algemeen gebruikt als een natuurlijke eiwitbron ter vervanging van soja of dier-\/vleesproducten in voeding en diervoeder. Ze kunnen water in voeding binden, zodat ze ei kunnen vervangen in brood en bakkerijproducten. Dit verbetert de versheid en stabiliteit van dergelijke producten. Daarnaast wordt lupinemeel in dieetvoeding gebruikt in plaats van tarwe-, rogge- of gerstemeel.<\/p>\n\n\n\n<p>Parallel aan het toegenomen gebruik zijn sinds het jaar 2000 allergische IgE-gemedieerde reacties gemeld en zijn kruisreacties waargenomen bij personen met een pinda-allergie. Omdat lupines ernstige allergische reacties kunnen veroorzaken, moeten ze op voedingsmiddelen worden vermeld.&nbsp;Het allergeen kan aanwezig zijn als een ingredi\u00ebnt of als een besmetting in onbewerkte en verhitte producten.<\/p>\n\n\n\n<p>In 2007 werd lupine toegevoegd aan de al bestaande \u2018grote acht\u2019-lijst in de Europese regelgeving (2007\/68\/EC, annex IIIa).
