Algemeen risicomanagement is daarom moeilijk.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Schaaldieren<\/h3>\n\n\n\n<p>Het geslacht van de schaaldieren (crustacea) omvat steurgarnalen, krabben, garnalen, zeekreeft, rivierkreeft, krill, langoesten en grote krabben. De consumptie van schaaldieren kan ernstige allergische reacties veroorzaken bij mensen die aan allergie lijden. Deze reacties hebben betrekking op de huid, het maagdarmkanaal en de luchtwegen. Het spiereiwit tropomyosine is verantwoordelijk voor deze reacties. Dit hittebestendige eiwit vormt 20% van het totale eiwitgehalte van schaaldieren. Allergie\u00ebn tegen schaaldieren ontwikkelen zich vaker op volwassen leeftijd en kunnen vaak levenslang blijven bestaan. Een hoge sensibiliseringsgraad is niet ongewoon. Om deze allergische reacties te vermijden, moeten voedingsproductie-lijnen residu-vrij zijn. De effectiviteit van de reiniging van het productiesysteem kan worden onderzocht met een lateral flow swabtest, en de voeding kan worden geanalyseerd met de ELISA- en PCR-testen.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Weekdieren<\/h3>\n\n\n\n<p>Het geslacht van de weekdieren (mollusca) omvat mosselen, slakken en koppotigen (inktvis, pijlinktvis). Weekdieren zoals blauwe mosselen, oesters of octopus zijn een bijzonder populair gerecht in kustgebieden. Maar sommige mensen krijgen na consumptie allergische reacties. Net als bij schaaldieren is de hoofdoorzaak voor de allergische reacties bij weekdieren het allergene spiereiwit tropomyosine. Dit kan ook leiden tot kruisgevoeligheden.
