De voedselveiligheid is daarom een veeleisende uitdaging voor alle betrokken partijen, speciaal op het gebied van de kwaliteitsbewaking op primaire productielocaties en verkooppunten, en ook voor overheidsinstanties.<\/p>\n\n\n<div class=\"acf-block block-tabs block-\"><div class=\"block-tabs__menu\"><button onclick=\"openTab(event, 'tab--1',  'block-')\" class=\"block-tabs__title active \">Campylobacter<\/button><button onclick=\"openTab(event, 'tab--2',  'block-')\" class=\"block-tabs__title  \">Clostridium<\/button><button onclick=\"openTab(event, 'tab--3',  'block-')\" class=\"block-tabs__title  \">Legionella<\/button><button onclick=\"openTab(event, 'tab--4',  'block-')\" class=\"block-tabs__title  \">Listeria<\/button><button onclick=\"openTab(event, 'tab--5',  'block-')\" class=\"block-tabs__title  \">Salmonella<\/button><button onclick=\"openTab(event, 'tab--6',  'block-')\" class=\"block-tabs__title  tab--toggle tab--hide\">Staphylococcus<\/button><button onclick=\"openTab(event, 'tab--7',  'block-')\" class=\"block-tabs__title  tab--toggle tab--hide\">STEC, VTEC &#038; EHEC<\/button><button onclick=\"openTab(event, 'tab--8',  'block-')\" class=\"block-tabs__title  tab--toggle tab--hide\">Vibrio<\/button><a href=\"#\" onclick=\"toggleTabs(event, 'block-');return false;\" class=\"block-tabs__show-more\"><\/a><\/div><div class=\"block-tabs__area\"><div class=\"block-tabs__content active tab--1\"><p>Samen met salmonellose is Campylobacteriose wereldwijd een van de belangrijkste diarreeziekten. De forse toename van Campylobacter-enteritis wordt gestimuleerd door de wijdverbreide aanwezigheid van de bacterie in verschillende soorten wilde of gedomesticeerde dieren (vogels en zoogdieren die als vee of huisdier worden gehouden). Als commensaal in de darm van gevogelte bereikt Campylobacter de voedselketen van mensen via deze dieren. Bovendien kunnen andere voedingsmiddelen zoals melk, gemalen vlees en drinkwater werken als een doorgeefluik voor de pathogenen. Campylobacter komt via talrijke gastheren in grote hoeveelheden vrij in het milieu en bereikt het menselijk lichaam via besmette voedingsmiddelen. De effectieve dosis om een Campylobacter-enteritis te krijgen is relatief laag. Er zijn niet meer dan 500 kiemen nodig om een infectie te krijgen. Van circa 15 bekende Campylobacter-soorten staan vooral C. jejuni en C. coli bekend als verwekker van gastro-enteritis bij mensen.<\/p>\n<\/div><div class=\"block-tabs__content  tab--2\"><p>Clostridium-soorten zijn grampositieve, sporenvormende bacteri\u00ebn die bijna overal in het milieu aanwezig zijn. Sommige Clostridium-soorten zijn van belang als pathogenen, met inbegrip van Clostridium botulinum, Clostridium perfringens en Clostridium estertheticum. Als voeding niet voldoende wordt gekoeld, kan dat leiden tot een besmetting die ernstige ziekten kan veroorzaken. De bacteri\u00ebn zijn bestand tegen hoge temperaturen en kunnen dus ook in door en door verhitte voedingsmiddelen worden aangetroffen.<\/p>\n<\/div><div class=\"block-tabs__content  tab--3\"><p>Legionella is een geslacht van gramnegatieve, staafvormige bacteri\u00ebn die in water leven. Ze worden beschouwd als potenti\u00eble pathogenen voor mensen. De Legionella-soort die meestal verantwoordelijk is voor ziekten bij mensen, is Legionella pneumophila. Deze veroorzaakt de zogenaamde veteranenziekte (legionellose). De ziekte wordt gewoonlijk overgebracht door besmet drinkwater.<\/p>\n<\/div><div class=\"block-tabs__content  tab--4\"><p>Listeria wordt aangetroffen in vrijwel alle gebieden van het leven. Het is mogelijk om het besmettingsrisico met kwantitatieve detectie te schatten om te waarborgen dat preventieve maatregelen kunnen worden genomen als dat nodig is. Listeria monocytogenes in het bijzonder, wordt beschouwd als een belangrijke oorzaak van voedselvergiftiging, die kan leiden tot sepsis, meningitis en encefalitis.<\/p>\n<\/div><div class=\"block-tabs__content  tab--5\"><p>Salmonella wordt gerangschikt onder de belangrijkste verwekkers van voedselvergiftiging. De WHO schat een aantal van meer dan 16 miljoen infecties wereldwijd per jaar met meer dan een half miljoen doden. Salmonella wordt aangetroffen in onbewerkte voeding zoals eieren, vlees en melk. Het mogelijke risico is hoog, in het bijzonder bij voeding die maar weinig of helemaal niet verwarmd hoeft te worden (bijvoorbeeld kaas van rauwe melk, worst van rauw vlees, chocolade, ijs). In de huidige intensieve veeteelt kunnen besmettingen met Salmonella nauwelijks worden vermeden. Daarom is een effectieve kwaliteitscontrole met betrouwbare testmethoden belangrijk. Voor dit doel bieden we een reeks van verschillende testsystemen aan voor de hygi\u00ebnische controle van oppervlakken en voor de analyse van voeding.<\/p>\n<\/div><div class=\"block-tabs__content  tab--6\"><p>Staphylococcus aureus is een bolvormige bacterie die onder de microscoop als een cluster van organismen kan worden waargenomen die lijkt op een druiventros. De cellen hebben een grootte van 0,8 tot 1,2 \u00b5m, zijn grampositief en niet-beweeglijk. S. aureus is voor mensen een natuurlijke commensaal op de huid en in de bovenste luchtwegen, die in het algemeen geen ziekten veroorzaakt. In het geval van infecties met pathogene stammen of bij immunodefici\u00ebntie personen kan S. aureushuidinfecties en abcessen veroorzaken maar ook levensbedreigende ziekten als pneumonie, meningitis, endocarditis of het toxische shocksyndroom (TSS).<\/p>\n<p>Een reden voor de facultatieve pathogeniciteit van S. aureus is zijn vermogen om enterotoxines (SET) te vormen die zich kunnen ophopen in besmette voeding en niet volledig ge\u00efnactiveerd kunnen worden met een hittebehandeling. Besmetting van voedingsmiddelen met S. aureus wordt bijna altijd veroorzaakt door mensen (handen, niezen, hoesten). S. aureus wordt daarom als een indicator voor slechte persoonlijke hygi\u00ebne beschouwd.<\/p>\n<p>Naast zijn relevantie voor de voedingshygi\u00ebne, speelt S. aureus ook een significante rol in de ziekenhuishygi\u00ebne. In het bijzonder stammen van S. aureus die resistent zijn geworden tegen gewone antibiotica, de zogenaamde methicillineresistente Staphylococcus aureus (MRSA), kunnen een niet in te schatten gevaar vormen omdat ze moeilijk te behandelen zijn.<\/p>\n<\/div><div class=\"block-tabs__content  tab--7\"><p>De bacterie Escherichia coli (afgekort E. coli) is een natuurlijk bestanddeel van de darmflora bij mens en dier en is gewoonlijk onschadelijk. Maar er zijn pathogene stammen die ernstige infecties kunnen veroorzaken. Een van deze pathogene stammen staat bekend als enterohemorragische E. coli (EHEC). Deze bacteri\u00ebn maken de toxische stoffen verotoxine of shiga-toxine en staan ook bekend als verotoxine-producerende E. coli (VTEC) of shiga-toxineproducerende E. coli (STEC). Infecties met STEC\/VTEC worden gerangschikt onder de meest voorkomende voedingsgerelateerde bacteri\u00eble ziekten die zelfs tot de dood kunnen leiden. Bronnen van besmetting zijn hoofdzakelijk rauw vlees en ongepasteuriseerde zuivelproducten.<\/p>\n<\/div><div class=\"block-tabs__content  tab--8\"><p>De groep van Vibrio spp. omvat pathogene micro-organismen die ernstige infecties kunnen veroorzaken na consumptie van besmette voeding. Bij de seafood-gerelateerde ziekten is Vibrio spp. een van de belangrijkste oorzaken van gastro-enteritis, wondinfectie en sepsis. Bovendien is Vibrio spp. een oorzaak van ernstige infecties met mogelijke epidemie\u00ebn, zoals cholera.<\/p>\n<p>De bacterie Vibrio parahaemolyticus komt van nature voor in kustwateren en is in de zomer in hogere concentraties aanwezig. Het organisme is halofiel of heeft zout nodig. Daarom wordt Vibrio parahaemolyticus aangetroffen in zeemilieus, in seafood en in de feces van pati\u00ebnten met acute enteritis.
