Deze komt gewoonlijk voor samen met ochratoxine en wordt voornamelijk onder slechte opslagomstandigheden na een oogst gevormd.<\/strong><\/p>\n\n\n\n<p>Citrinine kan in talrijke producten voorkomen, zoals bonen, fruit, olijven, kruiden en specerijen. De stof wordt ook vaak gedetecteerd in rode rijst die is gefermenteerd met schimmels die in Azi\u00eb worden gebruikt als conserveermiddel en kleurmiddel. De schimmel&nbsp;<em>Monascus purpureus<\/em>&nbsp;wordt gebruikt voor de fermentatie van rode rijst om een voedingssupplement te produceren (rode-rijstgistpoeder). Vanwege het gezondheidsbevorderende effect wordt dit steeds belangrijker. Maar besmetting met citrinine is mogelijk.<\/p>\n\n\n\n<p>Commissieverordening (EU) nr. 212\/2014 specificeert een maximumgehalte van 2000&nbsp;\u03bcg\/kg (ppb) voor citrinine in voedingssupplementen op basis van rijst, gefermenteerd met de rode gist&nbsp;<em>Monascus purpureus<\/em>. De grenswaarde werd opnieuw ge\u00ebvalueerd in januari 2016.
