Deze reacties worden gewoonlijk uitgelokt door eiwitten; allergische personen zijn al gesensibiliseerd voor deze eiwitten.<\/p>\n\n\n\n<p>De etikettering van deze allergene eiwitten, die allergenen worden genoemd, is van groot belang voor allergische personen. In deze context zijn verborgen allergenen gevaarlijk door hun aanwezigheid, bijvoorbeeld in gemaksvoeding of als onbedoelde verontreiniging van voeding tijdens opslag en productie.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Voedings-etiketteringsverordening<\/h3>\n\n\n\n<p>Om allergische personen te beschermen tegen ongewenste consumptie van allergenen, is de voedings-etiketteringsverordening van de EU aangenomen. Deze EU-verordening wordt voortdurend bijgewerkt en herzien (EU-verordening 1169\/2011 werd van kracht in december 2014).
