De allergie wordt meestal veroorzaakt door het eiwit parvalbumine, een zeer krachtig allergeen dat in veel vissoorten voorkomt. Het DNA van beenvissen kan in voeding worden gedetecteerd door middel van real-time PCR. Dit helpt vis betrouwbaar te identificeren als allergeen.
