Bederfbacteri\u00ebn en gisten kunnen troebelheid, smaakverandering en een vieze bijsmaak van dranken veroorzaken. Om verliezen of terugroepingen te voorkomen, is het belangrijk om op bederforganismen te testen in alle productiegebieden. Relevante parameters in de drankenproductie<\/h3>\n

De volgende bederfbacteri\u00ebn en gisten zijn van bijzonder belang in de drankenindustrie en moeten worden gecontroleerd:[vc_accordions style=”simple-style” open_toggle=”-1″ container_bg_color=”#ffffff”][vc_accordion_tab icon=”mk-moon-circle-small” title=”Alicyclobacillus”]Alicyclobacillus<\/em> is een grampositieve, strikt aerobe, acidofiele en thermofiele bederfbacterie die speciaal belangrijk is voor de vruchtensapindustrie, waar is aangetoond dat de bacterie grote hoeveelheden guaiacol kan produceren waardoor vruchtensappen een bijsmaak krijgen. Alicyclobacillus<\/em> is van bijzonder belang voor de vruchtensappenindustrie omdat gangbare pasteurisatietechnieken de sporen niet deactiveren. Daarom is vroegtijdige screening op Alicyclobacillus<\/em> zeer belangrijk voor de industrie, omdat verontreiniging kan leiden tot aanzienlijk kwaliteitsverlies en vervolgens tot economische verliezen voor de producenten. Alicyclobacillus acidoterrestris<\/em> wordt beschouwd als de belangrijkste bederfsoort binnen de Alicyclobacillus<\/em>-geslachten, maar andere, bijv. Alicyclobacillus acidocaldarius, <\/em>zijn ook ge\u00efsoleerd uit bedorven producten.[\/vc_accordion_tab][vc_accordion_tab icon=”mk-moon-circle-small” title=”Brettanomyces (dekkera)”]Dekkera bruxellensis<\/em> (anamorf Brettanomyces bruxellensis<\/em>) is een bederfgist in dranken, vooral belangrijk voor de wijnindustrie, waar gebleken is dat er grote hoeveelheden vluchtige fenolen (4-ethylfenol en 4-ethylguaiacol) door worden geproduceerd die aan rode wijnen een bijsmaak geven. De gisten van de soort Dekkera bruxellensis<\/em> zijn verantwoordelijk voor ernstige economische verliezen in de wijnindustrie, omdat ze wijn kunnen bederven door de productie van ethylfenolen. Sommige autoriteiten zijn van mening dat \u2018brett\u2019 verantwoordelijk is voor 90% van de bederfproblemen in rode kwaliteitswijnen. Bij de productie van bier (vooral ambachtelijk bier of Belgische bierspecialiteiten), wordt Dekkera bruxellensis<\/em> echter vaak niet als verontreiniging beschouwd, maar als smaakverrijking.[\/vc_accordion_tab][vc_accordion_tab icon=”mk-moon-circle-small” title=”Lactobacillus”]Lactobacillus<\/em> kan deel uitmaken van een gangbaar fermentatie-proces, maar kan ook leiden tot ongewenste verzuring van bier of bederf van vruchtensappen. Lactobacilli<\/em> worden gedood door standaard pasteurisatie.[\/vc_accordion_tab][vc_accordion_tab icon=”mk-moon-circle-small” title=”Megasphaera”]Megasphaera<\/em> zijn gramnegatieve, strikt anaerobe bacteri\u00ebn. Ze staan bekend als bierbedervers die een vieze bijsmaak en troebelheid geven.[\/vc_accordion_tab][vc_accordion_tab icon=”mk-moon-circle-small” title=”Oenococcus oeni”]In de wijnproductie wordt de malolactische fermentatie ondersteund door Lactobacillus<\/em>. Tijdens dit proces kan de bacterie Oenococcus oeni<\/em> als zeer gespecialiseerde bacterie toegevoegd worden. Deze bacterie zorgt voor de omzetting van appelzuur in het mildere melkzuur. Afhankelijk van het gewenste type wijn kan de aanwezigheid van Oenococcus oeni<\/em> echter ook ongewenst zijn.[\/vc_accordion_tab][vc_accordion_tab icon=”mk-moon-circle-small” title=”Pectinatus”]Naast Megasphaera<\/em> is Pectinatus<\/em> een andere belangrijke bederfbacterie in de bierproductie. De gramnegatieve en strikt anaerobe bacterie veroorzaakt troebelheid en een bijsmaak die doet denken aan rotte eieren.[\/vc_accordion_tab][vc_accordion_tab icon=”mk-moon-circle-small” title=”Pediococcus”]Pediococcus<\/em> is een grampositieve melkzuurbacterie die als verontreiniging wordt beschouwd in wijn en bier. In sommige biersoorten kan de aanwezigheid van Pediococcus<\/em> echter gewenst zijn.[\/vc_accordion_tab][vc_accordion_tab icon=”mk-moon-circle-small” title=”Pichia”]Pichia<\/em> is een gistengeslacht uit de saccharomycetacea-familie. Deze gist wordt gebruikt in het fermentatie-proces bij de wijnbereiding, maar in grote hoeveelheden kan de gist de wijn bederven. Pichia<\/em> kan ook troebelheid en een bijsmaak bij bier veroorzaken.[\/vc_accordion_tab][vc_accordion_tab icon=”mk-moon-circle-small” title=”Saccharomyces”]Saccharomyces<\/em> is een schimmelgeslacht waartoe diverse gistsoorten behoren. Een van de bekendste soorten is Saccharomyces cerevisiae<\/em> die gebruikt wordt bij de productie van bier, wijn of brood. De soort Saccharomyces diastaticus<\/em> is een bederfgist in de wijn- en bierindustrie.[\/vc_accordion_tab][\/vc_accordions]<\/p>\n
