As leveduras da esp\u00e9cie <em>Dekkera bruxellensis<\/em> s\u00e3o respons\u00e1veis por s\u00e9rias perdas econ\u00f4micas na ind\u00fastria do vinho devido \u00e0 sua capacidade de deteriorar vinhos pela produ\u00e7\u00e3o de etilfen\u00f3is. Algumas autoridades consideram que o \u201cbrett\u201d \u00e9 respons\u00e1vel por 90% dos problemas de deteriora\u00e7\u00e3o em vinhos tintos de alta qualidade. No entanto, na produ\u00e7\u00e3o de cerveja (especialmente cervejas artesanais ou especialidades de cervejas belgas), <em>Dekkera bruxellensis<\/em> muitas vezes n\u00e3o \u00e9 considerada um contaminante, mas sim um enriquecedor de sabor.<\/p>\n<\/div><div class=\"block-tabs__content  tab--2\"><p><em>Lactobacillus<\/em> pode fazer parte de um processo de fermenta\u00e7\u00e3o regular, mas tamb\u00e9m pode causar acidifica\u00e7\u00e3o indesejada da cerveja ou deteriora\u00e7\u00e3o de sucos de frutas. <em>Lactobacilli<\/em> s\u00e3o mortos pela pasteuriza\u00e7\u00e3o padr\u00e3o.<\/p>\n<\/div><div class=\"block-tabs__content  tab--3\"><p><em>Megasphaera<\/em> s\u00e3o bact\u00e9rias gram-negativas e estritamente anaer\u00f3bicas. Elas s\u00e3o bem conhecidas como agentes de deteriora\u00e7\u00e3o da cerveja, produzindo sabores indesejados e turbidez.<\/p>\n<\/div><div class=\"block-tabs__content  tab--4\"><p>Al\u00e9m de <em>Megasphaera<\/em>, <em>Pectinatus<\/em> \u00e9 outra bact\u00e9ria importante na deteriora\u00e7\u00e3o da produ\u00e7\u00e3o de cerveja. A bact\u00e9ria gram-negativa e estritamente anaer\u00f3bica causa turbidez e sabores indesejados que lembram ovos podres.<\/p>\n<\/div><div class=\"block-tabs__content  tab--5\"><p><em>Pediococcus<\/em> \u00e9 um g\u00eanero de bact\u00e9rias gram-positivas produtoras de \u00e1cido l\u00e1tico que s\u00e3o consideradas contaminantes em vinho e cerveja. No entanto, em alguns estilos de cerveja, a presen\u00e7a de <em>Pediococcus<\/em> pode ser desejada.<\/p>\n<\/div><div class=\"block-tabs__content  tab--6\"><p><em>Pichia<\/em> \u00e9 um g\u00eanero de leveduras da fam\u00edlia Saccharomycetaceae. \u00c9 utilizado no processo de fermenta\u00e7\u00e3o na vinifica\u00e7\u00e3o, mas pode estragar o vinho quando presente em grandes quantidades. <em>Pichia<\/em> tamb\u00e9m pode causar turbidez e sabores indesejados na cerveja.<\/p>\n<\/div><div class=\"block-tabs__content  tab--7\"><p><em>Saccharomyces<\/em> \u00e9 um g\u00eanero de fungos que inclui v\u00e1rias esp\u00e9cies de leveduras. Uma das esp\u00e9cies mais conhecidas \u00e9 <em>Saccharomyces cerevisiae<\/em>, que \u00e9 utilizada na produ\u00e7\u00e3o de cerveja, vinho e p\u00e3o.
